Spicy lamb burgers

1kg/2?lb minced (ground) lamb (get some with some fat in - it helps bind the burgers together)
2 garlic cloves, crushed
1 medium onion, finely chopped
1-2 tbsp mango chutney
3cm/1?in piece of fresh ginger, peeled and grated
1 red chilli, de-seeded and finely chopped
? tsp ground turmeric
1 tsp coriander seeds, crushed
1 tsp cumin seeds, crushed

For the relish:
6 ripe tomatoes, quartered, de-seeded and diced
200g/7oz tub of Greek yoghurt
bunch of fresh coriander, roughly chopped
1 small red onion, finely chopped
squeeze of lemon or lime juice

Put all the burger ingredients into a large bowl and mix by hand until all combined!. Season with sea salt and freshly ground black pepper!.
If you want to check the seasoning, fry a tiny bit in oil before shaping the rest!.

Divide and shape the mix into 8-10 burgers!. Place on a clingfilm covered tray and refridgerate for at least 30 mins!. You can make them the day before if needed!.

Just before cooking, brush with a little oil!. Barbeque, grill or fry for 5-6 mins each side!.

For the relish:
Mix all the relish ingredients together!. Season with salt and pepper!.
Serve with the burgers, either inside the bun or as a dipping sauce!. For a change, use diced, seeded cucumber instead of tomatoes, and try mint instead of coriander!.

Hobo Hamburgers
I'm not sure why these are called hobo hamburgers because they're more like little meatloaves!. Whatever you call them, they're good though!
1 pound ground beef
1 egg
3/4 cup bread crumbs
1/4 cup lemon juice
2 tsp Paula Deen's house seasoning OR 1 tsp salt, 1/4 tsp garlic powder, 1/4 tsp pepper
1/4 cup chopped green (or red) pepper, optional
1 cup grated Cheddar cheese
2 Russet potatoes, peeled and sliced
2 carrots, peeled, cut in half, then sliced lengthwise
1 large slice of onion for whoever likes onion
4 slices bacon, cut in half, optional
Mix the beef, egg, bread crumbs, lemon juice, seasonings, pepper, and cheese!.
Tear some foil pieces large enough to fold in half, but the burger on, then wrap tightly and seal!. Shape 4 patties and place one on each piece of foil!. Place onion, potato and carrot slices on top!. Top with 2 pieces of bacon!. Wrap the foil tightly around the meat and vegetables!. I like to bring two pieces up to the top and fold down a few times to create a nice seal, then roll the side pieces up!.
Bake at 350 for 45 minutes or cook over coals!.Www@FoodAQ@Com

1 onion finely chopped

1 large clove garlic finely chopped

1 piece ginger (same size as the garlic) finely chopped

1 good dash cooking oil

2 heaped teaspoons garam masala

1 heaped teaspoon tumeric

2 pinches dried chili flakes or chili powder

1 pinch dried cumin

1/2 pinch dried aniseed

1/2 pinch cinnamon powder

1/2 dash soy sauce

1 teaspoon tomato puree

1 pinch sugar



For the Rolls:

4 fresh bread rolls, about the same size as the patties

sliced tomato

thinly sliced onion

sliced cucumber

lettuce

mayonnaise


In a sauce pan over low to medium heat sauté the onion, garlic, ginger, masala, tumeric and chili in the oil!. Add a little water when the paste gets too thick to stir!. When the onion is soft add all the other curry ingredients and stir until the sauce starts showing signs of boiling!. Remove from the stove and allow to cool completely (better if left overnight)!.

To the meat add a bit of salt and the curry paste and mix thoroughly!.

Divide into 4 equal balls and press into patties (how to mold patties)!.

Cook on medium heat under the grill, on the barbecue or in a pan (how to regulate cooking temperature) until cooked or the internal temp reaches 160F/70C (when is my patty cooked!?)!.

Split the rolls and toast the cut surfaces lightly (under grill, on barbecue or in pan) just before the patties are done!. Spread mayonnaise on the bottom half of the roll, add a thin slice of onion, some lettuce, sliced tomato and a little sliced cucumber!. Add the patty and the top half of the roll!. Enjoy your Curry Burger

For The Patties:
1lb/500g ground beef (how to grind your own meat)
2 pineapple rings drained and crushed
1/2 handful grated cheese(equivalent to 4 slices)
A dash of teriyaki or soy sauce(about 2 tablespoons)
a little pepper, fresh ground is better
1 hand fresh bread crumbs
1 egg lightly beaten
1 quarter beef stock block dissolved in a quarter cup water

For the Rolls:
4 rolls
sliced tomato
thinly sliced onion
lettuce
mayonnaise


Mix all the patty ingredients thoroughly (how to season meat)!.
Make sure the mixture is cool!. Divide mixture into 4 equal balls and mold into patties (how to mold patties)!.

Cook on medium heat under the grill, on the barbecue or in a pan (how to regulate cooking temperature) until the patty is cooked to your preferred degree of doneness or the internal temp reaches 160F/70C (when is my patty cooked!?)!.

Split the rolls and toast the cut surfaces lightly (under grill, on barbecue or in pan) just before the patties are done!. Spread mayonnaise on the bottom half of the roll, add a thin slice of onion, some lettuce, a slice of tomato, the patty and the other half of the roll!.

or Pepperoni Pizza Burger




For the Base:

4 hamburger patties

For the Topping:

some pizza sauce, about a tablespoon per patty, or you could just mash a canned peeled tomato or two and mix it with a teaspoon or so of tomato puree

mozzarella cheese sliced, enough to cover 4 patties or about a handful of grated dry mozzarella

pepperoni, about 6 thin slices quartered!. You could also use chorizo or salami

2 pinches dried oregano

1/2 pinch dried chili pepper

1 pinch ground black pepper

For the Rolls:

2 rolls

butter


Add the oregano, pepper and chili to the pizza sauce/tomato and mix through!.

The patties should preferably be broiled under a grill or cooked on a Weber-like barbecue with the lid on!.

Grill/broil the patties until half cooked and flip them over!. Barbecue:- immediately spoon the sauce onto the patties, cover liberally with cheese, top off with the pepperoni (the quartered slices makes it easier on a small surface) and put the lid on the barbecue!. Oven/Broiler:- wait a minute or two after turning the patties before you add the toppings!. The burgers are ready when the cheese has melted!.

I have made these Pepperoni Pizza Burgers in a frying pan and it works quite well but you have to adapt slightly!. I pre-warmed the sauce, spooned it onto the turned patty, added the cheese and put the lid onto the pan!. I did not quarter the pepperoni and fried the slices lightly in a dry non-stick frying pan before putting them on the melting cheese just before the patties were done!.

Split the rolls and toast the cut surfaces lightly (under grill, on barbecue or in a dry pan) just before the patties are done!. Spread a little butter on the toasted surfaces, add the patty and enjoy a great tasting Pepperoni Pizza Burger!.

You could use 4 rolls and top the patty with the other half but I prefer them this way!.

-PIZZA BURGER-

Prep Time: 15 minutes
Cook Time: 10 minutes
Ingredients:
3 pounds ground round ( prefered ) or chuck
1/2 tablespoon oregano (dried and crumbled)
1/4 tablesppon basil (dried and crumbled)
1 small onion diced
2 cloves of garlic minced
1 small green or red pepper diced small
1/2 cup pizza sauce ( either store bought or homemade )
12 slices of mozzarella cheese
12 slices of Provolone cheese
12 slices of pepperoni
12 Kaiser rolls
for rolls:
3 tablespoons olive oil
1 teaspoon oregano ( dried and crumbled)
1 teaspoon of basil ( dried and crumbled)
1/4 teaspoon of garlic powder
Preparation:
Mix the burger, spices, onion, garlic, and pepper together and shape into 12 patties!. Grill over hardwood coals until done to your liking!. Baste with the pizza sauce for the last few minutes!. Cut rolls in half !. Mix the remaining herbs and olive oil and brush on both cut faces of rolls, place face down on grill for a few minutes to toast!. Remove from grill!. Place a slice of Mozzarella cheese on one half of roll and a slice of Provolone on the other half of roll!. Place one slice of pepperoni on top of one side of roll!. Place burger on one side of roll and brush with remaining pizza sauce!. Close roll and serve!.

Mix 93% Lean Ground Beef with a couple of dashes of worcershire sauce, garlic, salt, pepper, and very finely chopped onions!.
Form hamburgers into a ball!.!.!.all should be equal size!. Poke a hole in the end of one side and stuff with blue cheese, then seal up and flatten into hamburger patty!.
Grill on hot bbq grill until done or broil in oven!. Add slice of Swiss cheese and remove burger from grill when cheese is melted!. Serve on an onion bun (I like Pepperidge Farms) with avocado slices, a slice of vidalia onion, lettuce, tomato, and mayo!. Serve a garlic pickle on the side!.

This is my favorite burger recipe, I rarely make any other kind it's such a good combination!. The blue cheese really it makes it great!

The attached recipe from Gourmet Magazine is an awesome burger!. I haven't tried it yet with the pickled beets, but the pineapple, grilled onions and the sauce made with ketchup, mayo and sambal (although I prefer sirracha) is a great combination!.Www@FoodAQ@Com
