Make sure you use the 3 step breading procedure!. Dip the chicken piece in seasoned flour, shake off excess, then dip in egg mixture, let excess drip off, then in your seasoned breadcrumbs!. Let it rest for a while before you fry so the egg can dry a little and the crumbs and bond to the chicken!. I hope this helps you out!. Happy cooking!Www@FoodAQ@Com
Dont know what type of pan you are using but if it is cast iron it needs to be well seasoned so it doesnt stick!. But when frying chicken, the oil needs to be hot enough BEFORE you put chicken in pan, then leave it alone for a few minutes and do same for the other side!. You may need to turn fire down though after you get it hot enough cause you dont want to burn it!.Www@FoodAQ@Com
Are you using a batter or a coating!? If you're using a batter the dredge in flour first and shake off the access then dip into your batter and fry!. If you're using a coating then flour first, milk & eggs mixture then coating and fry!.Www@FoodAQ@Com
Try rolling the chicken in your coating mix, then dip into a mixture of 1 beaten egg and 1/2 cup milk, roll in coating again and fry!.Www@FoodAQ@Com
After doing the flour, egg and milk, and bread crumbs, let it sit for a few minutes to rest!. Seems to work for some reason!.Www@FoodAQ@Com
