How do I make my dough less watery and sticky?!

Question: How do I make my dough less watery and sticky!?
When I make dough from scratch its really sticky and wet looking!. It also will spread out way too much when it sits!. How do I make my dough nice and soft!. To the point if I use a cookie cutter it will come out nice!. Www@FoodAQ@Com

Answers:
Use as little water as possible!. Just enough to bring the dough together!. And the butter and the water must be very cold!. Then rest it at least an hour to get the gluten to relax!. Knead it a little to make it pliable but not too much or you will toughen it!.

Follow a tried recipe!.

Basic Cookie Dough Recipe

1 c!. (2 sticks) butter, softened
3/4 c!. granulated sugar
3/4 c!. brown sugar - lightly packed
1/2 tsp!. baking soda
1/4 tsp!. salt
2 eggs
1 tsp!. vanilla
2 1/2 c!. all-purpose flour

Put the butter, both sugars, salt and the baking soda in a large mixing bowl and beat with a mixer for about 3 minutes!. Blend in the eggs and vanilla extract!. Reduce the mixer speed and add the flour gradually!.

This cookie dough is best used when chilled so try to mix it up ahead of time to allow for a couple hours in the refrigerator!. Chill between batches!.

Bake at 375° for 10 to 12 minutes on an un-greased cookie sheet!.

Basic Bread Dough Recipe
1/2 cup warm water
3 teaspoons dry yeast
1 teaspoon salt
1 teaspoon sugar
4 cups high-gluten flour, plus more for dusting
4 tablespoons extra-virgin olive oil

Place the warm water in a warm mixing bowl and add the yeast!. Stir to dissolve the yeast, and let stand 3 minutes!. Add the salt and the sugar and stir to combine!. Add the flour and the olive oil and mix, using your hands until the dough comes together in a form that you can knead into a ball without the dough sticking to your fingers!.
Wash and dry your hands!. Remove the dough ball from the mixing bowl and place on a smooth cutting board!. Knead the dough, occasionally dusting it with a teaspoon of flour at a time, until you form a smooth, firm, homogenous ball, about 15 minutes!.

Place the dough ball into a lightly oiled bowl and cover it with a clean kitchen cloth!. Place the bowl in a warm area (like above the refrigerator) to rise until the dough is doubled in size, about 2 hours!. At this time, punch the dough down, and divide it into 4 equal pieces!.

The dough is now ready for use!.

more flour, you can't follow recipes exactly because depending on where you live the flour measures differently, i live in a very dry climate and the amount of flour in dough recipes is never quite right!. I measure out the full amount I need and add it slowly going by feel!. You may find that you need extra flour, so don't worry if you add more than the recipe says, just make it until it's to the consistency you want!. Www@FoodAQ@Com

knead in more flour!. If you're dough is sticky, you haven't develoed enough gluten!. Properly-kneaded yeast dough should be smooth, elastic, and kind of springy-taut!.Www@FoodAQ@Com

Add less water or liquid in the intial recipe!. If it turns out to thin then just add more flour, or oatmeal depending on the type of dough you are making!.Www@FoodAQ@Com
