Butternut Squash Casserole - yum yum!!!
1 butternut squash
1 cup white sugar
1 1/2 cups milk
1 teaspoon vanilla extract
1 pinch salt
2 tablespoons all-purpose flour
3 eggs
1/4 cup margarine, melted
TOPPING
1/2 (16 ounce) package vanilla wafers, crushed
1/2 cup margarine, melted
1 cup brown sugar
Preheat oven to 425 degrees F (220 degrees C)!.
Put butternut squash in the microwave and cook on high, until soft, 2 to 3 minutes!. Cut in half, scoop out seeds and cube!. Bring a large pot of water to a boil!. Add squash and cook until tender, about 15 minutes!. Drain and mash!.
In a 9x13 inch casserole dish combine 3 cups mashed butternut squash, white sugar, milk, vanilla extract, salt, flour, eggs and 1/4 cup melted margarine!.
Bake in preheated oven for 45 minutes, or until set!.
In a medium bowl combine crushed vanilla wafers, 1/2 cup melted margarine and brown sugar!. Crumble over top of cooked casserole and return to oven to brown!. serves15

Garlicky Baked Butternut Squash - delicious too!
2 tablespoons minced fresh parsley
2 tablespoons olive oil
2 garlic cloves, minced
1 teaspoon salt
1/2 teaspoon pepper
3 1/2 pounds butternut squash, peeled and cut into 1-inch cubes
1/3 cup grated Parmesan cheese
In a large bowl, combine the parsley, oil, garlic, salt and pepper!. Add squash and toss to coat!.
Transfer to an ungreased shallow 2-qt!. baking dish!. Bake, uncovered, at 400 degrees F for 50-55 minutes or until squash is just tender!. serves 6

Sprinkle the brown sugar and salt over the pieces and drop the butter on top!. Cover the pan with aluminum foil!. Bake at 375 degrees F (190 degrees C) for 35 minutes!. Serve hot and enjoy!

3/4 cup whole berry cranberry sauce
2 tablespoons orange marmalade
2 tablespoons apricot preserves

In a large saucepan, combine squash and water; bring to a boil!. Reduce heat; cove and simmer until squash is tender, about 25 minutes!. drain!. Spread the pie filling in a greased 8-in!. square baking dish!. Top with squash!. Combine cranberry sauce, marmalade and preserves; spoon over squash!. Bake, uncovered, at 350 degrees F for 25 minutes or until heated through!.

Slice the squash into managable pieces, slice/dice (whatever size suits you) one large onion, dice a full chicken breast and bake covered at 375 for 40 minutes!. Add cubed velveta (my favorite for this recipe because it's so creamy but any cheese works) bake uncovered till the cheese is melted thru!. I like spicey food so I add a dash of cayan and pepper!.Www@FoodAQ@Com
