Naughty girl-you should be researching properly, but, hey, I guess answers works too! Anyway, the rice gets sticky as the starches in the rice are brought to the surface!. The longer its cooked, the more the starches break down, causing the proteins in the rice to liquify, which is what makes it sticky!. There is a type of rice called glutenous rice (or sticky rice) in which the starch is already at the surface!. Despite its name, it is still a gluten free grain, and the gluten is not the same as what is in wheat and other high gluten grains!. Www@FoodAQ@Com
