Potatoes Au Gratin and Ham

Ingredients
- 2 cups cooked ham, cubed
- 3 pounds baking potatoes, peeled and sliced thin (approximately 9 med!. potatoes)
- 1/2 cup onion, finely chopped
- 2 1/2 cups whole milk
- 1/4 cup butter
- 5 teaspoons flour
- 12 ounces extra sharp cheddar cheese, shredded
- 2 tablespoons spicy brown mustard
- 1 teaspoon paprika
salt and pepper to taste

Directions
Preheat oven to 350o F!. Grease baking dish!.
Layer 1/3 sliced potatoes, 1/3 chopped ham, 1/3 onions in the pan!. Repeat layers, ending with sliced potatoes on top!.
In a sauce pan over medium heat, warm milk (do not boil)!. In a separate sauce pan melt butter and slowly stir in flour!. Cook for 2 minutes, stirring constantly!. Add warmed milk to the butter and flour mixture and continue to cook for 4 to 5 minutes while continuing to stir until thickened!.
Remove from heat, stir in shredded cheese, mustard, paprika, and black pepper!. (Return to low heat if cheese does not melt!.) Then, pour cheese sauce over layered potatoes!.
Bake uncovered for 1 hour or until potatoes are soft and top layer is golden brown!.


Note:Use a 3QT casserole dish for this recipe

Ham and Noodle Casserole
8 ounces wide egg noodles
2 to 3 cups cooked, diced ham
1 cup half-and-half
2 eggs, beaten
1/2 teaspoon salt, or to taste
1/2 teaspoon pepper
1/2 cup grated Parmesan cheese
2 tablespoons melted butter
Cook and drain noodles; combine with diced ham!. Place in a buttered shallow baking dish!. Whisk together half-and-half and eggs; add salt and pepper!. Pour over ham and noodles; sprinkle with cheese and drizzle with melted butter!. Bake at 350° for 45 minutes!.

Ham Casserole
4 ounces medium noodles
1 package (10 ounces) frozen broccoli spears
2 tablespoons butter
2 tablespoons flour
1 teaspoon salt
1/2 teaspoon prepared brown mustard
1/4 teaspoon black pepper
2 cups milk
1 cup grated mild Cheddar cheese
2 cups cooked diced ham
1/3 cup slivered toasted almonds*
Preparation:
Preheat oven to 350°!.
Cook noodles following package directions; drain!. Cook broccoli just until tender!. In a saucepan over low heat, melt butter; blend in flour, salt, prepared mustard, and pepper!. Stir until smooth and bubbly!. Gradually add milk, stirring until thickened; remove from heat and stir in cheese until melted!. Dice broccoli stalks; leave flowerets intact!. In an 8-inch square baking dish, arrange noodles, broccoli stems, and ham; pour cheese sauce over all!. Arrange the flowerets over the top, pressing down a bit!. Sprinkle with almonds!. Bake ham casserole for about 15 minutes, or until hot and bubbly!.
Ham casserole serves 4!.
*To toast nuts, spread out in a single layer on a baking sheet!. Toast in a 350° oven, stirring occasionally, for 10 to 15 minutes!. Or, toast in an ungreased skillet over medium heat, stirring, until golden brown and aromatic!.


Hash Browns & Ham Casserole
3 tablespoons butter
3 tablespoons all-purpose flour
2 cups milk
2 cups shredded cheddar cheese
1 tablespoon Dijon mustard
2 cups diced ham
1 package (24 ounces) frozen hash brown potatoes, thawed
1 (10-ounce) package frozen chopped spinach, thawed and drained well
1/2 cup buttered bread crumbs, optional
Over medium heat, melt butter in a large saucepan; add flour!. Stir until smooth; add milk!. Cook and stir until thick and bubbly; remove from heat and stir in cheese and mustard!. Place half of the ham in a lightly greased casserole!. Top ham with half of the hash brown potatoes and half of the cheese sauce mixture!. Spoon spinach over the top!. Repeat with the remaining ham, potatoes and sauce!. Top with buttered bread crumbs if desired!. Bake at 350° for about 45 to 55 minutes!.

1 can (10 3/4 ounces) condensed cream of celery soup

1 1/2 cups cubed cooked ham
8 ounces sliced mushrooms, sautéed in a little butter
1/4 cup dry white wine
1 small package spaghetti, (5 oz)
2 tablespoons butter, melted
Parmesan cheese
Combine all ingredients except spaghetti and butter in slow cooker; stir well!. Cover and cook on LOW setting for 6 to 8 hours!. Just before serving, cook spaghetti according to package directions; drain and toss with butter!. Stir into ham mixture in slow cooker!. Sprinkle additional grated Parmesan cheese just before serving!.


Ham Kedgeree
1 1/4 cups hot cooked rice
2 tablespoons butter
1 cup diced cooked ham
2 hard cooked eggs, chopped
1 teaspoon curry powder
2 tablespoons fresh chopped parsley
1/4 cup heavy cream
salt and pepper to taste
In a large non-stick skillet, combine all ingredients; heat thoroughly!.


Ham Jambalaya
1 tablespoon olive oil
1 tablespoon butter
2 large onions, chopped
1/2 green bell pepper, chopped
1/2 red bell pepper, chopped
2 medium cloves garlic, minced
2 cups cooked diced ham
1 cup uncooked rice
1/2 teaspoon thyme
1/2 teaspoon salt
4 drops hot pepper sauce, or to taste
1 can (14!.5 ounces) diced tomatoes
1/2 cup chicken broth
Heat oil and butter in a Dutch oven or heavy large saucepan; add onions, bell pepper, and garlic!. Cook, stirring occasionally, until lightly browned!. Add ham and rice; cook and stir until rice is well coated with oil!. Add thyme, salt, hot sauce, tomatoes, and chicken broth!. Cover and simmer until rice is tender and liquid absorbed, about 20 to 25 minutes!. Taste for seasoning and add more salt and pepper sauce as needed!.


Broccoli & Ham Casserole
2 cups chopped, cooked ham
1 (10 oz) pkg!. frozen broccoli
1 cup cooked rice
1 can cream of celery or mushroom soup
1 cup shredded cheddar cheese
1 small onion, chopped (optional)
1/2 cup sour cream
1/2 cup buttered bread crumbs
salt and pepper to taste
Combine all ingredients except croutons!. In a 2- to 2 1/2-quart casserole or baking dish, combine ham, broccoli, cooked rice, soup, cheese, onion, and sour cream!. Spread bread crumbs over top!. Bake 55 to 65 minutes at 325°, or until browned and bubbly!.

Here's one that my adult sons have enjoyed since they were 2 years old!.

Ham Noodle Casserole

2 Tbs butter
2 Tbs flour
1 cup milk
1 cup grated cheddar cheese

4 cups uncooked, extra wide egg noodles
2 cups diced, cooked ham
2 Tbs ketchup
1 cup thawed peas

Pre-heat oven to 350

Cook noodles al dente (6-7 minutes)!.

Meanwhile, melt butter in sauce pan over low heat!.
Slowly whisk in flour and cook for 1 minute!.
Slowly add milk, stirring constantly, until bubbly!.
Slowly add cheese; stirring until melted and blended!.
Stir in ketchup!.

In a 2!.5 quart casserole dish, mix noodles, ham, and peas!.
Pour cheese sauce over mixture and fold together!.

Bake uncovered for 30 minutes!.

Chop some up and throw it in mac and cheese!.

Glazed Ham Balls

INGREDIENTS
2 eggs
1 1/2 cups crushed saltines
3 pounds ground fully cooked ham
2 cups packed brown sugar
6 tablespoons cider vinegar
2 teaspoons ground mustard


DIRECTIONS
In a large bowl, combine the eggs and cracker crumbs!. Crumble ham over mixture and mix well!.
Shape into 1-1/2-in!. balls!. Place into two greased 15-in!. x 10-in!. x 1-in!. baking pans!. Bake, uncovered, at 350 degrees F for 40 minutes or until lightly browned!.
Meanwhile, in a large saucepan, combine the brown sugar, vinegar and mustard !. Bring to a boil; cook and stir for 2 minutes or until thickened!.

INGREDIENTS
24 heat and serve pull-apart rolls
1 1/2 pound fully cooked ham
6 slices Swiss cheese, quartered
1/4 cup butter or margarine, melted
1 tablespoon prepared mustard
1/2 teaspoon Worcestershire sauce
1 tablespoon poppy seeds



DIRECTIONS
Separate rolls!. Evenly divide ham and cheese into 24 portions and place in the center of each roll!. Place in a greased 13-in x 9-in!. x 2-in!. baking pan!. Combine butter, mustard and Worcestershire sauce; mix well!. Pour over rolls!. Sprinkle with poppy seeds!. Bake at 350 degrees F for 10-15 minutes!.

INGREDIENTS
1/2 cup chopped fresh broccoli
1/4 cup chopped green pepper
1/4 cup chopped fresh mushrooms
3 tablespoons chopped onion
1 garlic clove, minced
2 teaspoons vegetable oil
2 cups chopped fully cooked ham, divided
1 1/2 cups shredded Swiss cheese, divided
1 (9 inch) unbaked pastry shell
4 eggs, beaten
1 cup light cream



DIRECTIONS
In a saucepan, saute the broccoli, green pepper, mushrooms, onion and garlic in oil until tender!. Sprinkle half of the ham and cheese into pie crust!. Cover with the vegetables and the remaining ham and cheese!. Combine eggs and cream; pour over ham and cheese!. Bake at 350 degrees F for 45-50 minutes or until knife inserted near the center comes out clean!. If needed, cover edge of crust with foil to prevent excess browning!.

INGREDIENTS
2 (8 ounce) cans refrigerated crescent rolls
2 tablespoons prepared mustard
2 tablespoons dried parsley flakes
2 tablespoons finely chopped onion
1 tablespoon butter or margarine, softened
1 cup chopped, peeled tart apple
1 cup chopped fully cooked ham
3/4 cup shredded Swiss cheese
2 tablespoons grated Parmesan cheese



DIRECTIONS
Unroll crescent dough; pat onto the bottom and up the sides of an ungreased 15-in!. x 10-in!. x 1-in!. baking pan!. Seal seams and perforations!. Bake at 375 degrees F for 10-12 minutes or until lightly browned!. Combine mustard, parsley, onion and butter; spread over crust!. Sprinkle with apple, ham and cheeses!. Bake 5-10 minutes longer or until cheese is melted!. Cut into squares!.

Fried Rice with Ham
Serves 4!.

3 large eggs, lightly beaten w/ 2 tsp!. waer
2 Tbsp vegetable oil
Coarse salt to taste
4 green onions, thinly sliced diagonally (both white and green parts)
4 garlic cloves, minced
5 oz!. ham, thinly sliced and chopped (or use cooked chicken or shrimp)
4 cups cold cooked rice
? tsp!. sesame oil
3 Tbsp!. rice vinegar
1 cup frozen peas, thawed

In a large nonstick skillet, heat 1 Tbsp!. oil, swirling to coat!. Beat eggs, with 2 tsp!. water and ? tsp!. coarse salt!. Cook in skillet, moving cooked eggs aside gently to allow raw eggs to run in their place, about 2 minutes!. Transfer to plate; when cool enough to handle, cut into strips!.

In same skillet, heat remaining Tbsp!. oil!. Add garlic and scallions, heat and stir until fragrant, about 1 minute!. Add ham and rice, season with salt and sesame oil, and cook until very hot, stirring often, about 5 minutes!. Add vinegar, peas, and eggs, cook until very hot, about 2 minutes!.

Macaroni & Cheese with or without Ham
Serves 6

If you like, use just one type of cheese, or mix with other melting cheeses, such as pepper jack, Muenster, Swiss, or Gruyere!.

Coarse salt and ground pepper
1 lb!. elbow macaroni, cooked and drained
4 Tbsp!. butter
1 small onion, chopped
? cup A/P flour
4 cups milk
1/8 tsp!. cayenned (red) pepper, optional
1? cups (5 oz!.) shredded yellow cheddar cheese
1? cups (5 oz!.) shredded white cheddar cheese
8 oz!. ham, diced in ?” pieces
2 slices white sandwich bread

Preheat oven to 375oF!. In a 5 quart heavy pot, melt butter over med!. heat!. Add onion; cook, storring occasionally, until softened, 3-5 minutes!. Whisk in flour to coat onion!. In a slow, steady stream, whisk milk in until there are no lumps of flour!.

Cook, whisking often, until mixture is thick and bubbly and coats the back of a spoon, 6-8 min!. Stir in cayenne pepper and 1 cup each yellow and white cheeses!. Season with 1 tsp!.salt and ? tsp!. pepper!.

Toss pasta w/ cheese sauce; fold in ham!. Transfer to a greased 9x13” baking pan or individual ramekins!. Set aside!.

In a food processor, pulse bread until large crumbs form!. Toss together with remaining cheddar cheeses and ? tsp!. salt!. Top pasta with breadcrumb mixture!. Bake until top is golden, about 30 minutes!.

You can also add a couple cups of diced ham to either of these:

POTATO GRATIN WITH HERBS

3 lbs!. russet potatoes, peeled and cut into thin rounds
2 Tbsp!. butter
1 1/4 cups whipping cream**
1 1/4 cups whole milk
1/2 grated parmesan cheese
1/2 cup chopped fresh chives (1/4 cup dry)
2 tsp chopped fresh thyme (heaping 1/2 tsp!. dry)
1 tsp kosher salt
1/2 tsp FGBP

Preheat oven to 400°F!. Grease an 8x8x2-inch glass baking dish with cookign spray or butter!.

Place cream, milk, cheese, chives, thyme, salt, pepper and butter in large Pyrex measuring cup or bowl; nuke on high for 5 minutes!.

Meanwhile, place potatoes in greased dish, overlapping top layer of potatoes in pretty pattern, if desired!. Pour hot milk mixture over potatoes, jiggling dish to coat potatoes completely!. Cover dish tightly with foil!.

Bake 40 minutes!. Uncover and continue to bake until potatoes are tender, sauce bubbles thickly and top is golden, about 15 minutes more!. Let potatoes stand about 10 minutes before serving, if you have the time!. Serves 8!.

**Oftentimes, I will also use canned evaporated milk (not sweetened condensed) instead of whipping cream to cut back on fat and calories!.

Scalloped Potatoes

2 lbs!. Russet potatoes
3 tbs!. Bacon drippings
3 tbs!. Margarine
1 tbs!. AP flour
Salt and pepper to taste
1/2 c!. whipping cream
Milk

Preheat over to 350oF!. Peal and slice potatoes thin!. Put a layer in greased 1? quart baking dish!. Drizzle some of the bacon/margarine over your layer of potatoes, sprinkle with flour, salt and pepper and move on to the next layer!. You may also use a bit of minced onion on the layers, if you like!.

When you have your layers all set, pour the whipping cream over the layers then add enough milk to bring the level up near the top of the potatoes!. (Don't overfill your pan with potatoes or the milk or it will boil over in your oven!) Cover loosely with foil and bake 1? hours, remove foil and increase temp in the oven to 400oF and bake another 15 minutes to brown the top!.

1 can cream of celery soup
1 cup milk
1/4 cup finely chopped onion
1/4 teaspoon dried crumbled marjoram

1 1/2 cups herb seasoned stuffing mix
2 cups diced cooked ham
2 cups cut asparagus spears, cooked and drained

In a saucepan, combine cream of celery soup, milk, onion, marjoram, and rosemary; heat over medium heat just to boiling!. Add cheese; stir until mixture is smooth and cheese is melted!.
In a lightly buttered 1 1/2 quart casserole, layer 1/3 of the dry stuffing mix; top with half of the ham, half of the asparagus, and half of the cheese sauce!. Repeat layers!. Mix remaining 1/3 of the stuffing mix with 1 tablespoon melted butter; sprinkle over top!. Bake at 350° for 30 to 40 minutes, or until casserole is hot and bubbly!.
Ham and asparagus casserole serves 4 to 6!.

2 cups whole kernel corn
1/2 cup finely chopped green bell pepper
1/2 cup finely chopped onion
2 cups diced cooked ham
1 can condensed cream of celery soup
1 teaspoon prepared mustard
1 teaspoon dried parsley flakes
1 cup cracker crumbs
1/4 cup Parmesan cheese
In a bowl, combine corn, green bell pepper, chopped onion, and ham!. Stir in cream of celery soup, mustard, and parsley flakes!. Transfer mixture to a lightly greased shallow 2-quart baking dish!. Sprinkle casserole with bread crumbs and Parmesan cheese!. Bake ham corn casserole at 350° for 30 to 35 minutes!.This ham and corn casserole serves 4!.

*LEFTOVER HAM BAKE
6 med!. potatoes, sliced
3 tbsp!. butter
3 tbsp!. flour
1 tsp!. salt
1/8 tsp!. pepper
2 c!. milk
1 1/2 c!. grated Cheddar or Monterey Jack cheese
1 c!. cubed leftover ham
1 c!. bread crumbs
2 tbsp!. butter, melted
Put potatoes in pan!. Cover with water!. Bring to a boil!. Remove and drain immediately!. Transfer to greased 2 quart casserole dish!.
----Make sauce: Melt 3 tablespoons butter in a pan!. Stir in flour, salt, and pepper!. Cook over low heat, stirring constantly!. When thickened, add cheese, cooking until bubbly!. Pour sauce over potatoes!. Add ham; mix gently, so as not to break up potato slices!. Sprinkle with the bread crumbs mixed with 2 tablespoons melted butter!. Bake at 350 degrees for 1 hour or until bubbly!.

*Comfort Ham & Mac Casserole--this is the ultimate comfort food, serve with a tossed salad and rolls
1 16oz box macaroni
8 oz of sharp cheddar cheese
1/2 cup of chopped onion
3/4 pound of cubed leftover ham (slices will work too)
1 cup sour cream
1 can cream of mushroom soup
1/2 cup cornflake crumbs & 1/4 melted butter (reserve for the topping)
Boil macaroni for 6 minutes in a large pot, drain!. Put back into the pot!. Add the ham, onion, cheese, sour cream and mushroom soup!. Mix the cornflake crumbs and melted butter!. Top the casserole with this mixture!. Cover and bake for about 40 minutes at 350 degrees!. Take cover off and bake about 10 more minutes!.
----Notes: Make sure your macaroni is very al-dente when you drain it!. If it is too tender, it will turn to mush when baked!.

*Cheesy Escalloped Ham & Potatoes
6 large potatoes, sliced thin
1 large onion, sliced thin
1 pound ham, julienned
8 0z Sharp Cheddar Cheese
Cracked Pepper
3 cups of whole milk, cream or half and half
4 Tbsp butter in pats
Parsley flakes
Layer 1/2 of the potato slices in a greased casserole dish!. Top with lots of fresh ground pepper, 1/2 of the ham, 1/2 of the onion and 1 cup of cheese!. Repeat!. Pour the milk all over the casserole!. Top with the pats of butter, more pepper and parsley flakes!. Cover and bake at 375 degrees for a half hour!. Uncover and bake until liquid has just about absorbed/evaporated and the casserole is very creamy!.

*Ham Delight Sandwiches---These are so good, I guarantee you won't eat just one!
1 pkg of cooked dinner rolls ( prefer, King Hawaiian, Bob Evans or Sister Shubert's bake and serve)
1 8oz pkg sliced swiss cheese
1 pound very thinly sliced left over ham
----Sauce---
1/2 cup yellow mustard
1/2 cup packed light brown sugar
3 Tbsp butter
Melt the glaze ingredients until sugar is dissolved!. Set aside to cool a little!. Take package of dinner rolls (Ideally they should all be stuck together and not separated)!. Split the whole group of rolls in half and spread each of the cut halves liberally with the sauce!. Layer the ham on the bottom half of the rolls!. Top with the swiss cheese!. Put the top of the rolls on so that you now have a "dinner roll sandwich"!. Wrap the whole thing in tinfoil and bake in a 370 degree oven until the cheese is all melted and the rolls are hot through and through!. Take out and try to control yourself from eating the whole thing!.

*Ham Casserole with Peas and Noodles
1 ? cups chopped ham

1 8 oz!. brick low-fat cream cheese, softenen

Hamm pattys, very easy, chop all leftover meat in food proseser , do the same 1 onyun, put in a lg bowl, add 2 eggs mix, make into pattys, roll in panko or bread crums, fry in oil, I make a big bacth and freeze them, great for dinner or bkfstWww@FoodAQ@Com

Make a white sauce, add your ham, peas, and some noodles than bake till hot!. Could make pea soup!. also I love grilled ham and cheese sandwiches!. Even a cold ham sandwich with mayo is so so good!.Www@FoodAQ@Com
