1 pint heavy cream
1 stick (1/2 cup) butter
2 tablespoons cream cheese
1/2 - 3/4 cup Parmesan cheese
1 teaspoon garlic powder, add in more to suit your taste if you prefer
Salt and pepper, to taste
8 ounces fettuccine, cooked and drained
In a saucepan combine butter, heavy cream, and cream cheese!. Simmer this until all is melted, and mixed well!. Add the Parmesan cheese and garlic powder!. Simmer this for 15 - 20 minutes over low heat!.
Toss pasta lightly with sauce, coating well!. Leftovers freeze well!.

6 tablespoons unsalted butter
1 shallot, minced
1 cup heavy cream
1 cup finely grated Parmigiano-Reggiano
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
Fresh parsley, for garnish, optional
Cook the fettucine in a pot of rapidly boiling salted water until al dente!. Drain in a colander, reserving 1/4 cup of the pasta cooking liquid!.
While the pasta is cooking, melt the butter in a medium saucepan over medium-high heat!. Add shallots and saute until tender!. Add heavy cream and bring to a boil!. Cook until sauce has reduced slightly, about 5 minutes!. Remove from the heat!.
Return the pasta to the pot it was cooked in, set over medium-high heat along with the reserved cooking liquid!. Add the butter-cream mixture and half of the Parmesan and toss to combine thoroughly!. 1 cup shredded mozzarella
1 cup grated Parmesan
1-2 teaspoons each of salt, pepper, garlic powder, onion powder, and oregano
Heat in saucepan over medium heat until the liquid foams up!. Reduce to low heat!. Stir continuously until cheese is completely melted!.
