Answers:
Get down eye level to the top of each cake, and cut the rise off!. Place the cake on the serving plate (cut side up), and do the same thing to the second layer!. The second layer should be placed cut side down so that the 2 cuts parts are together!. Of course, you frost in between the layers!. If you have gaps, just fill it with frosting!. When the cake is finished you will not be able to tell if it is a little off!.
Good Luck!.
**One more note: When you bake the cake, turn the temperature down 25 degrees while baking!. It will take a little longer to bake but the cake will not rise as much!.Www@FoodAQ@Com

Instead of worrying about trimming the tops of the cake, invert the bottom layer so you are working with the flat part!. The weight of the cake will take care of the slight unevenness of the base!. Apply your frosting!.

Now put the top layer on right side up!. You will have the flat surface meeting the flat surface!. The slight crown on the top of the cake can either be incorporated into the overall look, or you can apply the frosting thicker around the outside and thinner toward the center!.Www@FoodAQ@Com

You can just take the "dome" off!. Put the bottom layer on the plate as normal, but turn the other layer upside down!. If you put alot of filling/frosting between the layers, that will fill in those gaps; and the top of your cake will be perfectly flat!. !.!.!.!.You can always just saw across the top of the cake pan (using a long, serrated bread knife) to make it even with the top of the pan, but you're losing alot of the cake that way!. If you DO want to cut it off, and have lots of extra cake scraps, just crumble them up with some raspberry or strawberry jam, and a dash or 2 of rum or brandy and make little balls!. Then roll those in powdered sugar or cocoa; and let them sit in the refrigerator for a few days!. Those make great rum balls!Www@FoodAQ@Com

All cakes have rounded tops from baking!. Trim off the top so that it is even to the sides!. Take the next layer and do the same and then turn it over and set on the iced lower layer!.You can take the scraps that you cut off and crumble up real fine with a food processor and decorate the sides with them!.

The next time you bake cakes try just a little less volume in the pans!. Hope this helps a little!.Www@FoodAQ@Com

Take a good serrated bread type knife and trim it down to where the rim is on the cake itself!. You lose a fair amount of cake this way but it will be even!. You can run the blade around the edge of the cake first and eyeball it to give you a guide to follow or use a ruler and mark the cake!. Www@FoodAQ@Com

Use the rim of the pan as a guide, but when it comes to adding the frosting invert the cake, and cover the nice even bottom!.
No one will notice if you ice the sides as well!.Www@FoodAQ@Com
