Question: I have a bag of flounder fillets!?
I cook fish a lot and I always either make it blackened or fried!.

Crab Stuffed Flounder --



INGREDIENTS
1 1/2 pounds flounder fillets
1 cup crabmeat - drained, flaked and cartilage removed
1 tablespoon finely chopped green bell pepper
1/4 teaspoon ground dry mustard
1/4 teaspoon Worcestershire sauce
1/4 teaspoon salt
ground white pepper, to taste
3 crushed saltine crackers
1 egg white
1 tablespoon mayonnaise
1/4 cup butter, melted
1 egg yolk
5 tablespoons mayonnaise
1/2 teaspoon paprika
1 tablespoon dried parsley



DIRECTIONS
Preheat oven to 400 degrees F (200 degrees C)!. Rinse the fillets and pat dry with paper towels!.
Combine crab meat, green pepper, mustard powder, Worcestershire sauce, salt, white pepper and the crushed saltines!. Combine the egg white and 1 tablespoon mayonnaise!. Stir this into the crab meat mixture!.
Brush the flounder fillets with melted butter!. Place in a lightly greased, shallow baking dish!. Spoon the crab mixture over the fillets and drizzle with any remaining butter!.
Bake the fillets at 400 degrees for 15 minutes!.
While the fish is baking, lightly beat the egg yolk in a small bowl!. Stir in 5 tablespoons of mayonnaise!. Remove fish from oven and spread this mixture over the stuffing; sprinkle with paprika and parsley!.
Increase oven temperature to 450 degrees and bake until golden and bubbly, about 6 minutes!.

Baked Seafood Au Gratin --



INGREDIENTS
1 onion, chopped
1 green bell pepper, chopped
1 cup butter, divided
1 cup all-purpose flour, divided
1 pound fresh crabmeat
4 cups water
1 pound fresh shrimp, peeled and deveined
1/2 pound small scallops
1/2 pound flounder fillets
3 cups milk
1 cup shredded sharp Cheddar cheese
1 tablespoon distilled white vinegar
1 teaspoon Worcestershire sauce
1/2 teaspoon salt
1 pinch ground black pepper
1 dash hot pepper sauce
1/2 cup grated Parmesan cheese



DIRECTIONS
In a heavy skillet, saute the onion and the pepper in 1/2 cup of butter!. Cook until tender!. Mix in 1/2 cup of the flour, and cook over medium heat for 10 minutes, stirring frequently!. Stir in crabmeat, remove from heat, and set aside!.
In a large Dutch oven, bring the water to a boil!. Add the shrimp, scallops, and flounder, and simmer for 3 minutes!. Drain, reserving 1 cup of the cooking liquid, and set the seafood aside!.
In a heavy saucepan, melt the remaining 1/2 cup butter over low heat!. Stir in remaining 1/2 cup flour!. Cook and stir constantly for 1 minute!. Gradually add the milk plus the 1 cup reserved cooking liquid!. Raise heat to medium; cook, stirring constantly, until the mixture is thickened and bubbly!. Mix in the shredded Cheddar cheese, vinegar, Worcestershire sauce, salt, pepper, and hot sauce!. Stir in cooked seafood!.
Preheat oven to 350 degrees F (175 degrees C)!. Lightly grease one 9x13 inch baking dish!. Press crabmeat mixture into the bottom of the prepared pan!. Spoon the seafood mixture over the crabmeat crust, and sprinkle with the Parmesan cheese!.
Bake in the preheated oven for 30 minutes, or until lightly browned!. Serve immediately!.

Flounder Mediterranean --



INGREDIENTS
5 roma (plum) tomatoes
2 tablespoons extra virgin olive oil
1/2 Spanish onion, chopped
2 cloves garlic, chopped
1 pinch Italian seasoning
1/4 cup white wine
24 kalamata olives, pitted and chopped
4 tablespoons capers
1 teaspoon fresh lemon juice
6 leaves fresh basil, chopped
3 tablespoons freshly grated Parmesan cheese
1 pound flounder fillets
6 leaves fresh basil, torn



DIRECTIONS
Preheat oven to 425 degrees F (220 degrees C)!.
Bring a saucepan of water to a boil!. Plunge tomatoes into the boiling water, and immediately remove to a medium bowl of ice water!. Drain, and remove skins!. Chop, and set aside!.
Heat olive oil in a skillet over medium heat, and saute onion until tender!. Stir in garlic and Italian seasoning!. Stir in tomatoes, and cook until tender!. Mix in wine, olives, capers, lemon juice, and 1/2 the basil!. Reduce heat, blend in Parmesan cheese, and cook until the mixture is reduced to a thick sauce, about 15 minutes!.
Place flounder in a shallow baking dish!. Cover with the sauce, and top with remaining basil leaves!.
Bake 12 minutes in the preheated oven, until fish is easily flaked with a fork

INGREDIENTS
1/4 cup butter
1 cup finely chopped onion
1 cup minced celery
1 tablespoon chopped fresh parsley
8 ounces crabmeat
8 ounces shrimp, peeled, deveined and minced
1/4 cup dry vermouth
salt to taste
ground black pepper to taste
1/4 teaspoon hot pepper sauce
1/2 cup bread crumbs
1 (17!.5 ounce) package frozen puff pastry sheets, thawed
2 pounds flounder fillets
2 egg yolks, beaten



DIRECTIONS

Here is a way to "Braise" your flounder!. It is more Japanese than yankee!
4 whole flounders, about 200-250g each, cleaned, or 4 white fish fillets 150g each
750ml water
1 teaspoon salt
125ml sake
125ml soy sauce
2 tablespoons mirin
3 tablespoons sugar
21/2cm fresh ginger, thinly sliced
120g fresh spinach, washed, trimmed, and tied in small parcels
Using a sharp knife, score each fish on one side by making 2 parallel diagonal incisions about 3cm apart!. Turn the fish over, and make 2 more parallel incisions on the diagonal!. Make the cuts deep enough to almost touch the bone!.
Combine the water, salt, sake, soy sauce, mirin and sugar and bring to a boil in a deep skillet!. Add the fresh ginger and cook for 30 seconds!.
Place fish in a single layer in the water, overlapping heads and tails as necessary!. When liquid returns to a boil, reduce heat to low and cook fish for 2 minutes!.
Spoon liquid over fish but do not turn fish over!. Cook for another 3 minutes, continually basting, until the fish flakes easily with a fork!.
Place spinach parcels alongside the fish and cook for 30 seconds!. Remove from heat!.
Carefully lift fish and spinach onto serving plates, and spoon some cooking liquid over the top!. Serve immediately with steamed rice

This is going to sound crazy, but it's DELICIOUS and I have used it on flounder and Haddock!.

I put it in a microwave safe dish (spray dish with Pam or EVOO), sprinkle fillet with lemon juice; cover with bread crumbs; add pads of butter on top of the bread crumbs to cover the fish (not entirely); sprinkle some parsley and paprika and I also will add a tiny bit of parmesan and romano cheese (just a touch)!. Cover with plastic wrap and put in the microwave!. Depending on the thickness of the fillet, I would suggest 3 to 5 minutes!. Keep checking until the fish is flaky!. Www@FoodAQ@Com

2 tablespoons unsalted butter
1 medium onion, chopped
1/2 teaspoon kosher salt, plus extra for the sweat and for seasoning fillets
1 clove garlic, minced
1 (10-ounce package) frozen chopped spinach, thawed and squeezed dry
1 lemon, zested
1/4 teaspoon freshly ground black pepper, plus extra for seasoning fillets
2 tablespoons chopped fresh parsley leaves
1 cup heavy cream
1/4 cup white wine
10 ounces grated Cheddar
1 1/2 to 2 pounds flounder fillets
3 cups leftover cooked rice

Preheat the oven to 350 degrees F!.
In a medium saute pan over low heat, melt the butter; add the onion and a pinch of salt and sweat until translucent!. Add the garlic and continue to cook for another minute!. Add the spinach and lemon zest and cook until just heated through!. Season with the salt and pepper, add the parsley, and stir to combine!. Remove from the heat and keep warm!.

Place the heavy cream and wine into a saucepan over medium heat!. Once the mixture begins to simmer, gradually add the cheese and stir until melted!. Set aside and keep warm!.

If the fillets are large, cut in half!. Season each filet on both sides with salt and pepper!. Divide the spinach mixture evenly among the fillets and roll the fish around the mixture!. Place the rice into a 2 1/2-quart casserole dish and spread evenly!. Place each roll on top of the rice, seam side down!. Pour over the cheese sauce and place in the oven for 25 minutes!. Allow to cool for 5 minutes before serving!.

you could make fish tacos / burritos!. they are awesome! I got turned onto them by a local mexican place!. you can actually find little packets at the store for fish taco seasoning by the packaged chili seasonings and what not!.

we had them last week and used tilapia but the package recommended flounder!. you just put the fish in a skillet cut into 1/2" slices, put the seasoning in (was really like a typical taco seasoning so you could just add your own), after it is cooked through squeeze lime juice over it all, put it on a spinach tortilla with some mayonnaise, shredded cabbage and used salsa and what not for dipping!. awesome!Www@FoodAQ@Com

A simple casserole you can make:

A layer of potatoes on the bottom of the casserole dish (sliced, cubed, quartered, however you like)!. On top of the potatoes add a layer of broccoli Place the flounder on top and pour a cream of _______ soup over everything!. I've made flounder similar to Jenna's, both in the microwave, and fried with a little olive oil!. Cook until the fish is just white and flaky!. Delicious!

You could also make a simple stuffing of seasoned breadcrumbs and butter!. You can expand the menu by adding mushrooms, asparagus, clams, crab meat, or whatever your taste buds are craving!. If the stuffing is precooked, it will take less time for the stuffed fish to cook, and it won't dry out as much!. Place a few spoonsful of stuffing on a fillet, roll up, and pin with a toothpick!. You can bake or pan fry!. I don't have a recipe, but usually bake at 350F for about 10 to 15 minutes, or until the fish is done!.Www@FoodAQ@Com

Baked Parmesan Fish

Ingredients:
1/3 cup grated Parmesan cheese
2 tablespoons all-purpose flour
1/2 teaspoon paprika (I substitute Emeril's Essence)
1/4 teaspoon salt
1/8 teaspoon pepper
1 egg
2 tablespoons milk
4 orange roughy or catfish fillets (4 ounces each)

Directions:
In a shallow bowl, combine the Parmesan cheese, flour, paprika, salt and pepper!. In another shallow bowl, beat egg and milk!. Dip fish fillets into egg mixture, then coat with the Parmesan mixture!.

Arrange in a greased 13-in!. x 9-in!. x 2-in!. baking dish!. Bake, uncovered, at 350° for 25-30 minutes or until fish flakes easily with a fork!. Yield: 4 servings!.

Capers and Halibut

"This is a very easy seared halibut with a buttery wine and caper sauce! It takes hardly any time at all to make, but it is sure to leave a lasting impression!."

INGREDIENTS
1 tablespoon olive oil
2 (8 ounce) steaks halibut
1/2 cup white wine
1 teaspoon chopped garlic
1/4 cup butter
salt and pepper to taste
3 tablespoons capers, with liquid

DIRECTIONS
Heat the olive oil in a large skillet over medium-high heat!. Fry the halibut steaks on all sides until nicely browned!. Remove from pan, and set aside!.
Pour the wine into the pan, and use a spatula to scrape any browned bits from the bottom!. Let the wine reduce to almost nothing, then stir in the garlic, butter and capers!. Season with salt and pepper to taste!. Let the sauce simmer for a minute to blend the flavors!.
Return the steaks to the pan, and coat them with sauce!. Cook until fish flakes easily with a fork!. Serve fish immediately with the sauce from the pan poured over it!.

Baked Fish with Shrimp

"Easy and delicious way to impress your family and guests with a recipe that's almost too simple! The fillets are covered with cooked shrimp and a simple white sauce!. Grated Parmesan cheese is sprinkled over the top of this baked dish!. Grouper, snapper, and catfish are all good choices for this recipe!."

INGREDIENTS (Nutrition)
3 tablespoons butter
2 tablespoons all-purpose flour
1/2 teaspoon salt
1 cup milk
2 pounds red snapper fillets
1/2 pound cooked medium shrimp, peeled and deveined
1/4 cup grated Parmesan cheese
(I spice this up with 1/2TB Old Bay seasoning and 1/4 cup of sherry)


DIRECTIONS
Preheat oven to 325F!.
In a small saucepan, melt butter over medium low heat!. Whisk in flour and salt to make a paste!. Gradually whisk in milk!. Stirring constantly, cook until sauce is thick enough to coat the back of a spoon!.
Select a pan large enough to accommodate all the fillets in one layer!. Coat with cooking spray!. Arrange fish in pan, and cover with shrimp!. Pour white sauce over shrimp!. Sprinkle with grated cheese!.
Bake, uncovered, for 20 to 25 minutes!.

Try this, it is good for any white fish
Line a baking pan with enough foil to tent
Preheat oven to 375
Place the fish in the pan, enough to cover the whole bottom of pan
On top of fish, place small pieces of butter
On top of the butter, place slices of tomato, lemon, and onion
Top this with small tsp of mayo(do not use salad dressing)
Sprinkle with cracked pepper, season salt and parsely
Tent the foil, and bake for 25-30 minutes

The ingredients that are placed on the fish cook down and make a sauce, I like to serve this with rice, and asparagus
It does not matter what order you put these ingredients, it still comes out great!.

My family will only eat asparagus when I serve this fish meal

You can BBQ the fish, just be sure to oil the grill before placing the fish on it!. Alternatively, you could place a wood plank (that's been soaked) on the grill and put the fish on top of the wood!.

Another way could be to steam it in a foil pack in the oven!. Add some spices and veggies and whatever liquid (white wine is nice!) into the foil pack and put into the oven on a tray!.Www@FoodAQ@Com

I've used this recipe, originally for tilapia, with flounder and other mild-flavored white fish!.


TILAPIA IN TOMATOES AND OLIVES

1 lb!. tilapia fillets
1/2 tsp!. salt
1/4 tsp!. cayenne or 4-5 drops hot sauce
2 Tbsp!. olive oil, divided
3 cloves garlic, minced (≈ 1 Tbsp!.)
1 can (14-16 oz) crushed tomatoes, OR 2 c!. halved cherry tomatoes
OR 2 c!. diced fresh tomatoes
4 oz!. sliced black olives, drained

Heat oven to 400F!. Set fish fillets in a baking dish just large enough to hold them!. Sprinkle fish with cayenne as evenly as possible!. (If using hot sauce, mix it with tomatoes!.) Drizzle with 1 Tbsp!. olive oil!.

Heat remaining Tbsp!. olive oil in small skillet over medium-high heat!. Add garlic and cook 30 seconds or so, until garlic is aromatic and turning golden!. Add tomatoes and olives (and hot sauce if not using cayenne)!. Cook ten minutes, stirring occasionally!. Spoon over fish and bake ten minutes, or until fish is cooked through and flakes easily!. Lift individual fillets and their sauce with flat spatula for serving!.

Broil with a bit of butter, top with lemon and fresh herbs!.
Grill over medium heat (cover the grill with aluminum foil and poke holes in it)!. Serve with lemon juice and melted butter!.
Stuff with crab meat and a little brie!. Spread it on the open fillet, roll up!. Secure with toothpicks or tie with kitchen twine!. Bake at 350 for about 15 minutes, or until done!.

Easy Stffed Flounder Fillets:

Rinse and pat dry the flounder fillets and season with salt and pepper!. Mince some shallots and mushroons and saute in a little butter, add some stuffing mix, 1 beaten egg, and a little cream and chicken broth to moisten!. Mound a 1/2 cup portion of stuffing on one fillet and top with the other!. Bake 15 to 20 minutes at 350 degrees until fish flakes easily!. Serve on a bed of long grain and wild rice with lemon wedges!.

i like to stuff them with a crab meat mixture, it is so yummy, just melt some butter and some garlic and some lemon juice, add some bread crumbs and some celery flakes, cook in pot for a few minutes, untill it all comes together, if too try add more butter if too wet add more bread crumbs!. put a spoonful in a flounder slice and roll it up or put to flounders on top of each other with stuffing in between, melt more butter add garlic and lemon juice and pour over stuffed flounder and bake, yummmmmyWww@FoodAQ@Com

One of my recipes for flounder/fluke/tilapia

Turn oven on to broil

Put fillet in a baking pan

Sprinkle olive oil on both sides,

Salt & pepper

Onion & garlic powder

A bit of dried oregano

A squeeze of lemon on each fillet!.

Broil until done BUT do not turn over!.

I do this with Tilapia but is good with other mild white fish!.

Saute some olive oil, fresh pepper corns, low salt soy sauce, lemon, vinegar, brown sugar and!.!.!.!.!.!.!.!.RUM !
About a tablespoon of all the above except for the rum!.!.!. about 1/2 cup!.

Let it reduce to half and let cool in frige then pour over your fillets and let it sit for about 15 minutes

Then put the fish in one of those baskets for the grill which you can flip!.!.!. Oil the grates first!.

5 mins each side medium heat on the grill!.

i normally use this for tilapia and my fiance loves it!.!.!.
put each piece in tinfoil with a little bit of butter, lemon juice and garlic salt!. wrap it up tight, and either grill it outside on the grill, george formen it, or bake it in the oven!. you say you cook fish alot so you should know by looking at it if it is done!. Fish Pockets
Take a piece of tin foils and brush it wit a healthy oil or butter!.
Place fish fillet on foil and add:- finely sliced peeled potatoes, onion rings, minted green peas!. (veggies of your choice)
Wrap and crimp edges!.

Toss on a medium hot BBQ 10 minutes either side!.

Try fish tacos!
Take corn meal mix, salt, pepper, and paprika if you like a lil spice!. place in a bag, throw in your fish and coat well!. Heat a pan with about 2 tablespoons of olive and fry well on both sides!. Go outside and fire up the grill,I have found that the KISS rule is the best way to go!. I tried wrapping it around crab meat (I got a package of real crab meat for about $3!.99 from Trader Joes) and served with lemon cream sauce!.

Again, the fish wasn't good --- but the crab and sauce were!

try the fish with a pecan/panco breadcrumbs/pepper flake (sparingly as too much will make it too hot) and any other seasoning you like crusted coating!.!.and baked them in the oven!.!.!.you have to be careful with Flounder if you decide to fry it as it a very delicate fish that breaks apart easily!.!.!.I love this fish, it melts in your mouth like butter!!!!!.!.yum!!!!.!.have fun making it!Www@FoodAQ@Com

you can saute them in olive oil, with onions, cut into ringlets, salt and pepper it or whatever kind of seasoning you prefer, so long as you saute it, it should come out with a lot of flavor from the olive oil and the onions!.Www@FoodAQ@Com

You can put them on a bed of stuffing in a baking dish and bake it!.

You could try to grill it or steam it!. If you do not have a grill place it on a wood plank and season it and then bake it you will get a nice smoked flavor out of the wood!. Www@FoodAQ@Com
