What is your secret to making fluffy pancakes?!

Answers:
When you mix your batter together before putting it onto the griddle, don't mix it too much!. It's like blueberry muffins!. If you mix too long, you'll lose the air bubbles and it won't be as fluffy!.Www@FoodAQ@Com
Even hot heat!. 375 degrees!. Batter should be on thick side!. Do not stir out all the lumps!. Turn when edges just start to dry out about say, 1/8 inch or so!. Get the pancake to 'bake' soon as you can!.
I use Krusteaz these days but when I used to make them from scratch, the recipe would use both baking powder and baking soda!. Krusteaz has a slight baking soda taste/feeling to it way in the back!. In addition the recipe would have more whole eggs then you would find in most that were well beaten for the air before adding!.Www@FoodAQ@Com
