Question: Do most cooks know you can't bake tuna steaks in aluminum foil with tomatoes, lemon juice !?
Please help me explain why this meal wont work!.Www@FoodAQ@Com

I certainly do, but what I've done to counteract this situation is to layer each side of the aluminum foil with either white or red cabbage, bok choy, chinese cabbage, even romaine lettuce or radicchio, any heavy leafed lettuce will stop the citrus and aluminum foil from reacting together!. I put my grill marks on the Tuna Steak, quickly and lightly, then lay out my foil, put a double thick layer of white cabbage down, then put my Tuna Steak on top, seasonings, citrus, oils, then cover it again with the red cabbage, then wrap it up!. You could also use a layer of parchment paper inbetween your aluminum foil and fish, that would prevent the citrus from eating the metal!. Yes, I know, the parchment paper sounds right, but the heavy leaves do not, but just try it! Any ways, happy cooking to you, this was an interesting question!Www@FoodAQ@Com

It has nothing to do with the tuna, but citric acid will eat through the thin walls and bottom of aluminum foil!.!.!.!.!.!.Why not just BBQ those tuna steaks instead!?Www@FoodAQ@Com
