Ideally you should boil the rice the day before you want to fry it,spread it out onto a large platter to cool and the refrigerate it until you want it!.This allows the grains to dry out a little and prevents them from sticking together or going mushy during frying but you should never keep cooked rice for longer than this or leave in unrefrigerated before use!.
Take a wok or large frying pan and pour in a tablespoon of good vegetable oil!.!.olive or sunflower for preference!.!.add finely chopped spring onions or shallot, finely diced carrot, a couple of cloves of chopped garlic if you like it, and then the rice, do not stir for a minute or so and then turn it quickly, with as little stirring as possible, and let it stand for another couple of minutes before turning again!. When you are satisfied that it is ready!.!.simply taste a grain or two!.!.either serve as it is or add a cup of thawed frozen peas, finely chopped mushrooms and/ or prawns!. You can make egg fried rice by having an egg or two,depending upon how much you are making, ready in a cup with a couple of tablespoon of water beaten into it!.!.as soon as you have done everything else, pour this mixture over the rice and move it gently to allow the liquid to go to the bottom of the pan, scrape it up and over until all the water is evaporated and the egg is distributed evenly through the rice!. Here's my favourite recipe for egg fried rice (but you could add anything you want)

Start off with some cooked rice (I usually use brown rice that i've cooked earlier on in the day as it needs to be dry to cook properly!. You could also use one of those packets of ready cooked microwave rice)!.
Heat up a tablespoon of vegetable oil in a wok!. Allow this to become smoking hot!.

Add the rice and stir continuously for about 3-4 mins or until it is warm all the way through!.

Add to this some peas, chopped spring onions and a good dash of soy sauce!. Fry this for a further 3-4 mins!. You want the veg to be warm but not soggy!.

Now for my favourite bit! Push all of the rice to one side of the pan!. In a cup, add 2 tablespoons of sesame oil (available in most supermarkets) and whisk with a fork!.

Tilt your wok gently and add the egg mixture to the empty side of the pan!. Let the egg cook for about 30 seconds to 1 min!.

Grab a chopstick and use it to break up the egg mixture, swirling the stick through it!. When It has cooked a little more, Vigorously toss the pan so the egg and rice become incorporated!.

Cook until hot, season and serve immediately!.

start with 1 cup per person of minute rice!. cook as you would but add one tbsp of oil!. i usually add my frozen peas and carrots to the rice while it is cooking for that 5 minutes!.
in a non stick "wok" type frying pan, you'll need to scramble an egg!.
add sliced scallions (the long green onion)!. then you will need 2 tbsp of soy sauce!.
add rice at this time and blend!.
a great addition is those little packets that you can find in the grocery store in the oriental food section !. they too have directions on them!.
fry up some chicken in soy and ginger sauce mixed to compliment your meal!. maybe add broccoli !!

I take left over rice and stir fry it in a little bit of oil with and egg, onions, peas, carrots and whatever other veggies I have on hand!. Www@FoodAQ@Com
