Potatoes are hard and tough? How do I correct it?!
Im making Potato Salad!. Should I throw it away and boil new ones or turn it into something else, how do I correct it!?Www@FoodAQ@Com

If you have not already made the salad, put the potatoes either in the microwave (covered with plastic wrap) or on the stove with a bit of water and cook some more!. If you have already made the salad, you could still put it in the microwave and cook them a little more provided you have not added the mayonnaise yet!.Www@FoodAQ@Com
I've a few good points for you!.
If the potatoes are hard and tough after you have cooked them and they have gone cold!? The the short answer is yes, you need to get new potatoes for your potato salad!.
COOKING:
1)When cooking the potato's, always start them off in cold water and bring it to the boil with the potatoes in the pot!.
2)Try putting a skewer or a fork through them, if the skewer goes in easily and comes out easily with out have to shake, bang or push the potato off!. Then they are cooked!.
3) Adding salt to the cooking water from the begining, helps the potatoes keep there shape
4)It doesnt matter if you peel and chop them before you cook them or after you cook them, but if your using a softer potato, a good suggestion is to boil them whole and peel them with a butter knife once they are drained and left to sit for about 5 min,
VARIATIES:
Try using varieties of potato that are waxy, firm and are intended for salads this means the potato will hold its cut shape and not break up in the salad, although in some potato salad recipes this is ideal too!.
DONT WASTE THE OLD ONES:
BUT dont through the older ones out They actually can be used because you've done whats called "par boiling" the potatoes!.
You can either
1)Slice them thinly and layer them in a casserole dish with some onions, butter and cream and cheese if you like with a good sprinkle of salt and pepper per layer and make a tasty potato bake!.
OR
2)Use them with your next roast in the oven and pop them in the same baking tray arranged around your meat and drizzle with a coat in a lil oil and a sprinkle of sea salt and fresh herbs for crispy golden baked potatoes!.

If your potatoes are under cooked, you can easily throw them back in boiling water to soften them!. I suggest you cut them into you desired size before boiling, which will make them boil faster and more evenly!.
While the potatoes are re-boiling, search your fridge or pantry for other stuff you can add to the salad to make it more interesting!. I love adding capsicum, pickles, corn kernels, and/or kidney beans!.

when baking take a fork and punch in a few holes before hand

5 hard-boiled eggs - 4 diced, 1 sliced (for garnish)
1/2 c!. mayonnaise
3 lb!. russet potatoes
Step1 Boil whole, unpeeled potatoes 15 minutes, or until just tender!. Don't overcook the potatoes or they will fall apart when you cut them!.
Step2 Peel and dice the potatoes while they are still warm!.
Step3 Add mayonnaise and diced eggs and stir until potatoes are moist!.
Step4 Add salt and pepper to taste, plus any of the following: 1/2 c!. chopped sweet or dill pickle (or pickle relish); 1/2 c!. celery, chopped fine; 1 tsp!. celery seed; 1 or 2 tbsp!. Dijon mustard; 2 tbsp!. chopped parsley; 1/4 to 1/2 c!. yellow or red onion, chopped fine; 1/2 c!. seeded and diced cucumber; 1/2 c!. red or green bell pepper, chopped fine!.
Step5 Mix all ingredients thoroughly!.
Step6Place finished salad in a large salad bowl and garnish with sliced egg, chopped parsley and paprika!.
Step7Refrigerate or keep on ice until ready to eat!.
Tips & Warnings
If you use raw onions in your potato salad, limit the amount to about 1/2 cup, and chop the onions very fine!.
For a tangier salad, mix the warm, diced potatoes with 2 to 3 tbsp!. cider vinegar, and then mix with the other ingredients!.

If you haven't added any mayo, etc!. yet you could put them in the microwave!. If you have added mayo, etc!. then you could rinse the mayo off through a colander and then pop them in the microwave!. You'll have to cool the potatoes off in the fridge before adding the mayo once again!.Www@FoodAQ@Com
