How do you melt chocolate without getting it burned or smelling burned?!

As the others said, use a double boiler!. If you don't have one, just set a slightly smaller pot in another pot with an inch or two of water in it!.
You can use a micro in 30 second intervals, but NEVER COOK ANYTHING IN A MICROWAVE FOR A LONG TIME! I made a mistake of boiling water in one for more than 3 or 4 minutes and the sensor shut down the microwave!. But something other than water would burn baby burn, as you've found out!.

Use a double-boiler, which is basically a smaller pot that sort of sits inside a larger pot, but without touching the bottom of the larger pot (in other words, there should be 2-3 inches of space between the bottom of the larger pot and the bottom of the smaller one that goes inside it)!. If you don't have an actual double-boiler, you can place a metal colander inside the larger pot, then put the smaller pot (or even a pyrex bowl) inside the colander!. As long as the smaller pot doesn't touch the bottom of the large one, it will be fine!. Put 3-4 inches of water in the large pot and bring it to a boil; the steam will heat the chocolate in the small pot/bowl without burning it!.Www@FoodAQ@Com

but i found that if i used two sause pans
one bigger then the other i put water in the bottom
of the bigger one then put the smaller one with the
chocolate in it into the bigger water filled one
(oh make sure the water is a 1/8th filled )
put on heat and stir the chocolate
or buy your self a Double Boiler

in a double broiler!. in the bottom pan boil about 2 cups of water, then put the top pan in and break the chocolate into pieces!. keep a close check on it sometimes it melts really fast!.Www@FoodAQ@Com
my mom melts Chocolate with a little milk in a microwave then it comes out creamy and not burnt i would try first a minute then add 30 till it is meltedWww@FoodAQ@Com
I use a double steamer that is already filled with water as the bottom pot!. In the top pot, I spray just some light cooking spray!. It works!Www@FoodAQ@Com
