Question: Humidity, Airbrushing, Marshmallow Fondant problems/!?
I recently got into airbrushing fondant covered cakes, and I hit a snag!. I made a cake, covered it in bunnywoman's marshmallow fondant, then I airbrushed (Amerimist colors) on the fondant!. It all dried and looked nice!. I then left to take it to someone and on the way there it started getting shiny and melting!. I live in Florida, so I don't know if it was the humidity, the fact that I refrigerated it, or what!. Do I need to use a fondant for higher humidity or somehow compensate for the water in the airbrushing colors!? or do I have to wait for it to skin over!?

In humid climates, sugar melts much easier than in dry climates!.

according to Wilton, you should not store a cake covered in fondant in either the refrigerator or freezer!. this is consistent with what I learned in school, which is sugar is hydroscopic, and under refrigeration it will lose it's shape and become brittle, or even melt, strangely enough!. if you remember to ice the cake before applying the fondant, and use a simple syrup on each layer, the fondant will seal in that moisture and help to preserve it for up to four days at room temp!. check out the Wilton rules for icings and cakes at http://www!.wilton!.com/decorating/icing/i!.!.!.
