Anyone who has ever baked......?!


Question: Anyone who has ever baked!.!.!.!.!.!.!?
Long story short!.

It starts like this!.!.!.!.!.I was going to buy chocolate muffins with white icing and red/pink/white strawberries on the top but it turns out that their not even available! Now, I will have to go and bake a cake!. This is where the trouble begins!.

I got to my nearest Safeway supermarket just about two kilometers away and stroll into the cake mix isle!.!.!.!. and then i have to make one of the hardest decisions of my life!. Plain cake or intricate cake!. One of them is faster to make and one is longer to make!. So i decided to make the intricate cake!. But I have to buy the ingredients!.!.!.!.!.

First i buy a 1kg Home Brand packet of sugar for around $1!.00!. Then I buy one 250g block of butter, which i cannot remember the brand!. But i stop and think!.!.!. think very hard!. I'm missing something: flour!. I walk back into the cake isle, nearly stumbling and there is a plain Home Brand flour or the self-raising Home Brand flour!. (they are both 1kg if your wondering) Flour is an ingredient of large quantity and is very important!. Should i buy the 1kg Home Brand plain flour and the baking powder, (of a brand i cannot remember), or just the 1kg self-raising flour!?

I am yet to bake the intricate cake of mine made of sponge with pink icing and strawberries and cream on the top!. It will be 25cm in diameter and 12!.5cm in diameter!. also, it is 8 cm in height!.

hm!.!. yes!.!. short story!. but i think generally sponge cakes don't need flour at all! the last sponge cape i made, i forgot to put the flour in and it turned out to be the tastiest, tallest fluffiest, best sponge cake ever made! yes, i was quite suprized as well shocked as well as excited!. In fact, tonight, i shall make another flourless sponge cake!. Oh, and the 1kg Home Brand packet of sugar for $1!.00 was a very good choice!. Www@FoodAQ@Com

Not sure how intricate you want your cake
But in my cooking experience

A lot of 'Sponge' Cake recipes take both Plain Flour and Self-Raising Flours, take for example this Basic Sponge:

However my general rule when making a sponge is to use Self Raising Flour and sift it lots-up to 7 times! That will give you the most height in the cake

I think it comes down to personal preference- I find a SR flour a lot more reliable, fluffy and fail proof
(and cheaper than buying baking powder and plain flour)

The first thing you should refer to is your recipe!. Which does it specify!? If you're not following a recipe, then perhaps you should buy the flour and the baking powder separately, so you can control how much leavening agent you put in your cake!.

If it's a sponge cake, then most of the recipes I make use cake flour and baking powder!. In fact, a basic hand-whisked sponge only calls for eggs, sugar, flour and salt!.

Otherwise, try it and experiment!. If you want to make your sponge a chocolate sponge, add in some cocoa powder to the recipe but remove the same amount from the flour used e!.g!. if your recipe calls for 120g flour, add 20g cocoa powder and remove 20g flour!.
