Can you correct this cooking fault?!
Im trying to make Apple crumble but the crumble top is burnt while base is insufficiently cooked on an apple crumble!. How do I correct it!?Www@FoodAQ@Com
Answers:
Is the top black burned or just dark brown!. If it is just really dark brown then lower the pan to the lowest rack in the oven!. Cover the top with foil, and maybe drop the temp just a bit!. Next time start with the top covered, then take the cover off when the rest is almost done to brown it!. Make sure the rack is in the middle of the oven also!.Www@FoodAQ@Com
What type of recipe are you using for the crumble!? What temperature are you baking it at!? What kind of apple are you using!?
These all have an effect!. Some apples are "harder" than others and keep their shape more and take longer to bake - e!.g!. a granny smith!. Apples like Macintosh and red delicious are sometimes "mushier" so they bake better!.
Make sure you don't bake at higher than 350!. That will make the topping brown much faster than you want!.
If you use a topping with mixed with butter, sugar and flour and oatmeal - a heavier topping, where your crumbles are about the size of peas, it won't brown as fast as a grainy topping!. I recommend instead of using melted butter, cut the butter in with a pastry cutter!. What you get is almost like a crumbly cookie dough!.
You could also try putting tin foil on the top until the last 1/2 hour or 15 minutes!. Or, you could try baking the apples without topping for awhile and then take them out and add topping and cook some more till the apples are done!.
Hope this helped at least a bit!. I have never had trouble with the top burning!.Www@FoodAQ@Com
