What are some good substitutes for?!
Hello,
I want to make some chewy caramels and I have this recipe:
1 cup butter or margarine
1 pound light brown sugar
1 (14 ounce) can sweetened condensed milk
1 cup light corn syrup
1 pinch salt
1 1/2 teaspoons vanilla extract
The problem is I don't have 2 things!.
1!.light corn syrup --- so, what's a good substitute for this!? (I don't have corn syrup either)!. I read somewhere that someone said he uses Kahlua instead! Has anyone tried that!?!
2!. sweetened condensed milk -- what's a good substitute for this!? Let me add that I only have milk, I don't have powdered milk or anything like that!.
Thanks in advance,

You could substitute molasses or any syrup for the syrup!. Molasses it will no longer be a light coloured or flavoured caramel but it would be good!.
I have made caramels with just sugar, syrup, butter and cream so maybe you could find a different recipe!.
Cream is what you want instead of the condensed milk but the fact that it is sweetened condensed in the recipe changes the sugar!.
You probably need a recipe that calls for cream instead of sweetened condensed milk - the recipe is not that complicated it is just a candy process!.
Another thing the no name brand of sweetened condensed milk is the same and as good as Eagle brand and much cheaper so buy a couple and keep on hand!.Www@FoodAQ@Com

Candy is difficult to make, and you need exactly what the recipe calls for!. There is NO good substitute for sweetened, condensed milk; and regular milk isn't even close!. You could substitute dark corn syrup for light (it will change the color), but anything else would change the consistency!. Molasses or cane syrup would be the closest, but way too dark to use!. Kahlua isn't even close again; it's a liqueur, not a thick sugar syrup - and alcohol will drastically change the cooking time & temps!. Just wait until you have a chance to go to the storeWww@FoodAQ@Com

A substitute for light corn syrup:
2 c!. sugar
1 c!. water
Combine in a pan and bring to full boil over medium heat!. Boil for one minute or until sugar is completely dissolved!. Cool and use as corn syrup!.
Sweetened Condensed Milk substitute:
You will need to simmer regular milk until it is about 60 percent reduced, then add 1 1/4 c!. of sugar!. (yes, that's a long, tedious process)
It's probably better for you to run to the store or put off your recipe until you can buy sweetened condensed milk!. It has a long shelf life, so buy a couple of cans to have on hand!.!.!.
