Have any "white" lasagna ideas?!
I love lasagna, and I think I've gotten pretty good at making a traditional one!.
For fun I want to try a white lasagna- but I'm not really sure what route to take with it!. I'm thinking of maybe a Bechamel sauce, maybe some scallops, a layer of spinach, some ricotta, mozzarella, and mozza!.!.!.maybe some roasted garlic!?
But I've never had a white lasagna and thought that maybe some of you have tried a good one, and could tell me what you liked about it/what was in it, or if anybody had any suggestions!?

You mushroom idea sounds great, I am a former chef and would go with alot of the first lady's ideas, bechemel sauce is a great base and you can flavour it with garlic, cheese's, herbs and other various ingredients, I use the no boil lasagna noodles and layer it while the sauce is warm, I know your looking for a white hue, but sauteed spinach, rapini and escarole make a nice added taste and are inexpensive and filling, I like white cheeses like parm, romano, asiago, fruiliani, ricotta, regular cottage cheese and mozzarella!.
Layer them along with your mushrooms, I would drain the juice off the mushrooms and mix it in the sauce to thin it or you may get really soggy parts, finish with a layer of noodles, sauce and cheese, baked for 25-30 minutes until brown and let sit then re-warm when serving, with the no boil noodles if you bake it completely they tend to get dry, if you want to use regular noodles and save some time, instead of boiling place them in a bowl, pour over some boiling water and let them sit, the rinse with cold, this makes them pliable and they will cook in the sauce, for them 45-60 hour, no hotter than 325 for regular and the same for the no-boil, gentle cooking makes a firm, tasty and filling dish!.Www@FoodAQ@Com

Your Bechamel idea sounds delicious!. I would add layers of baby spinach , some Mozzarella most definite and why not some grated Pecorino Romano cheese to "spice it up" a little bit so the taste of Bechamel doesn't make it feel so boring in your mouth !? You can make your own Bechamel, since it's very easy !

I use chopped shrimp in garlic for the "meat," with mozzarella melted in cream for the layers, which is smooth but doesn't taste too cheesy!. Light marinara for the sauce!. Www@FoodAQ@Com

Make it easy on yourself!. Use a jar of Alfredo Sauce to replace the red sauce!. It tastes delicious!

1 (10 ounce) package frozen chopped spinach, thawed and drained / washed and dried fresh spinach
1 (16 ounce) jar Alfredo sauce
1/4 teaspoon ground black pepper
1 cups shredded Mozzarella cheese
1 (15 ounce) container ricotta cheese
1/2 cup grated Parmesan cheese
1 egg, lightly beaten
3/4 (16 ounce) package no-boil lasagna noodles
1 cup shredded mozzarella cheese
Yields 12 servings
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C)!.
In a skillet over medium heat, cook the sausage until evenly brown!. Drain, and mix in the spinach and Alfredo sauce!. Season with pepper!. Continue cooking until spinach and sauce are heated through!.
In a bowl, mix the 1 cup mozzarella cheese, ricotta cheese, Parmesan cheese, and egg!.
In a 9x13 inch baking dish, layer 1/3 of the sausage mixture, 1/3 of the noodles, and 1/3 of the cheese mixture!. Repeat layers twice, and top with remaining mozzarella cheese!.
Cover, and bake 45 minutes in the preheated oven!. Let stand 15 minutes before serving!.
I have also made a mushroom and onion lasagna with a white garlic sauce and it was very good but I cannot seem to find my recipe for that one!. I remember it was a basic ricotta parmesan and egg cheese mix!. Then I would suggest any garlicy cream sauce that you like and saute the onions and mushrooms and use them instead of the meat layer!. Top with Mozzarella!.
