Question: I have a whole roaster chicken in a brine, what to do with it!?
I'm having a craving for roast chicken (which is handy because there is one brining in the fridge and I have to cook it today!) I usually rub it with melted butter and fresh thyme, sea salt and pepper!. It's delicious but I've been doing it that way for years and I want to try something new!

Any ideas for something different in the way of roasted chicken!?Www@FoodAQ@Com

I like to do mine the Greek way!. Mix some lemon juice (RealLemon, lemonade, or 7-up even if you don't have any lemon juice), olive oil, butter, greek seasoning (easy to buy, fairly easy to make), rub it all over the chicken, and bake it in a brown-n-serve bag at 350 for 2 hours!.

It will be falling off the bone tender and super delicious!.

Sometimes I do this, and then - put it on the grill for a few minutes just to add that outdoorsy flavor!.

Cajun seasoning would be great!. Not sure if you put your seasoning under the skin, but that it what I do for enhanced flavor!. My vote is a cajun seasoning blend!.Www@FoodAQ@Com

You didn't mention what the brining solution is that you are using, or whether or not its got fruit juice or wine and herbs in it, which might also dictate how you season it to roast it!. But, if its a simple salt and sugar solution, here are some ideas:

1!. Mix 1/2 cube softened butter with 1 Tsp rubbed sage, 1 Tsp thyme, and 1 Tsp chopped rosemary!. Add 1 tsp minced garlic!. Separate the skin from the meat and massage the mixture into the pocket!. If you can, create the pocket so that it goes into the thighs and legs as well!. Baste with a mixture of lemon juice, garlic, and butter!.
2!. Melt butter and add lemon pepper, garlic, and tarragon!. Baste every 15 minutes!.
3!. Add a pinch of lavender to your melted butter
4!. For a spicier version, add 2 T hot sauce and 1 tsp cumin to your melted butter!.
