Question: Inspire me with chicken! Please, new (easy-ish) recipes!?
I'm tired of the same old same old with chicken!. I cook A LOT so I've tried chicken every which way!. I'm tired of soy/teriyaki, no italian dressing marinade, no chicken parmesan, no chicken tenders!. I've had it grilled in lemon, diced in salad, this that every which way!.

Does anyone have any NEW and INNOVATIVE recipes that are creative and unique that I could try!?

I'll go to the grocery store if I need ingredients!.

*I love all kinds of cheese (bleu, goat, fresh mozz, etc!.) I love veggies (all kinds!!!), I love garlic, I love italian, mediterranean, middle eastern flavors!.

Bruschetta Chicken Skillet
1/4 cup KRAFT Sun-Dried Tomato Dressing
4 small boneless skinless chicken breast halves (1 lb!.)
2 large red peppers, chopped
2 cloves garlic, minced
2 cans (14-1/2 oz!. each) pasta-style or Italian-style diced tomatoes, undrained
1/2 cup water
2 cups instant white rice, uncooked
1 cup KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese 1 large tomato, chopped
2 Tbsp!. chopped fresh basil
HEAT dressing in large skillet on medium heat!. Add chicken, peppers and garlic; cover!. Cook 10 min!. or until chicken is cooked through (165oF), turning after 5 min!. Remove chicken from skillet; cover to keep warm!.

ADD canned tomatoes and water to skillet!. Stir in rice; bring to boil!. Reduce heat to low; simmer, uncovered, 10 min!. Meanwhile, combine cheese, chopped tomatoes and basil!.

RETURN chicken to skillet; sprinkle with cheese mixture!. Cover!. Cook 5 min!. or until chicken is heated through and cheese is melted!.

peel two potatoes and cut them into quarters or sixths
defrost a package of frozen spinach
throw both into a pan with chicken however you prefer it (diced, cut into strips, whole fillets, whatever)
cook until the spinach is loose, the potatoes are soft and the chicken is brown
add garlic
stir in a thick cream (or sour cream, it doesn't really matter)
bring to the boil
serve

or else, try roasting fillets, legs and wings of chicken in a dish with potatoes, mushrooms and whole cloves of garlic, all brushed lightly with olive oil!. yum!Www@FoodAQ@Com

cut a slit in your chicken breast, and stuff with stove top dressing!. coat in bread crumbs and slowly fry till brown on each side!. Place in glass baking dish and bake till done!. about 40 minutes!.

serve with rice, chicken gravy, and a green vegetable!.

Simplest chicken you will ever make!. Sprinkle a skinless and boneless breast with Good Seasons Italian dressing mix, the with some Parmesan cheese!. Bake at 400F for 20-22 minutes!.!. Juicy and tender!.Www@FoodAQ@Com

Saffron Chicken

Saffron chicken is a delicious, easy recipe that makes a great family meal!. It takes only a few ingredients, no kitchen talent, and even better is an inexpensive meals to make!.

This recipe is a simplified version of a Middle Eastern classic!.


Ingredients:

2 lbs!. boneless, skinless chicken breasts
1 lg!. onion, cut lengthwise (julienned)
1 ? tablespoons olive oil
? teaspoon saffron
3/4 cup chicken stock
? teaspoon salt
Water


Preparation:

Wash and trim chicken breasts and cut into 1 inch chunks!. On the stovetop, add olive oil to a large pan and brown chicken on medium heat!. Add onions and lower temperature to low-medium!. Cook until onions are golden brown (about 3 minutes), stirring frequently!.

In a separate saucepan, combine saffron and chicken stock and heat!. Once heated, pour over the chicken and simmer on low heat 35 minutes, covered!. Periodically check to see if water is needed (so chicken does not dry out) and add if necessary!.

Serve chicken over rice with warm pita bread!.

Chicken Tagine

You will never experience a flavor better than a tagine!. This chicken tagine recipe is perfect for beginners!

4-6 bonesless, skinless chicken breasts or thighs
1 onion sliced
2 cloves garlic, chopped
1 cup potatoes chopped into 1 inch pieces
1 1/2 cup tomato, wedged
1cups carrots sliced
1/2 teaspoon pepper
1 teaspoon salt
3/4 cups water
1/2 cup vegetable oil


Preparation:

In a tagine, or heavy large skillet, saute onions and garlic in vegetable oil!. Add chicken and brown on each side for about 4-6 minutes!.

Stir in 3/4 cups water, add potatoes and carrots!. Sprinkle with salt and pepper!.

Allow to cook on low heat for 35-45 minutes or until vegetables are tender!. Add tomato wedges and continue cooking for 10-15 minutes!.

Serve immediately!. You can serve this chicken tagine alone or along with white rice!.

Middle Eastern Style Fried Chicken

2 whole chickens, cut up or whatever piece of chicken desired
1 onion quatered
1 clove garlic, crushed
1 teaspoon tumeric
1 teaspoon coriander
1/2 teaspoon salt
1/2 teaspoon pepper
flour
vegetable oil for frying


Preparation:

Place chicken in a large pot and cover with water!. Add onion, garlic, coriander, tumeric, salt and pepper and stir!. Allow to simmer for 25-20 minutes!. This process allows the chicken to absorb the spices!.

In a frying pan or deep fryer, bring vegetable oil to 350 degrees!. Strain chicken from water and roll in flour!. When oil is hot, fry chicken pieces until golden brown and done!. Legs and thighs generally take about 15-20 minutes and breasts take 7-10 minutes for strips and cutlets, larger, thicker breast may take up to 15 minutes!.

Serve with a salad, rice, and olives!.

Here is an easy one--And yes, I HAVE made it numerous times!!!!! really good and simple and you can use any kind of cheese--even shredded--and sliced ham from the deli works just fine!. Try white wine instead of white grape juice if you like!.

SKILLET CHICKEN CORDON BLEU

INGREDIENTS
4 boneless, skinless chicken breast halves
4 thin slices fully cooked ham
4 thin slices Swiss cheese
3 tablespoons all-purpose flour
1 teaspoon paprika
1/3 cup butter
1/2 cup white grape juice
1 cube chicken bouillon
1 cup heavy whipping cream
1 tablespoon cornstarch
DIRECTIONS
Flatten chicken to 1/4-in!. thickness!. Top each with a slice of ham and cheese; fold to fit!. Roll up tightly and secure with toothpicks!. In a shallow bowl, combine the flour and paprika!. Coat chicken with flour mixture!.
In a large skillet over medium heat, melt butter!. Cook chicken for 5 minutes on each side or until browned!. Add grape juice and bouillon!. Reduce heat; cover and simmer for 30 minutes or until chicken is tender!.
Remove chicken and keep warm!. In a small bowl, combine cream and cornstarch until smooth!. Gradually stir into pan juices!. Bring to a boil; cook and stir for 2 minutes or until thickened!. Spoon over chicken

I love to dice up boneless/skinless breast and saute in a heated skillet with olive oil and fresh garlic, when the pink is gone add any veggies you like and also some al dente pasta, toss and heat through, top with your favorite shredded cheese!. Of course you can add al fredo sauce or a red gravy is you like!.Www@FoodAQ@Com

Oy, so many ways to make chicken!. What about chicken pot pie (giving you easy condensed version here!.), take a pie pan, add precooked rotisserie chicken (your leftover from the night before which you had rotisserie chicken) add frozen veggies and one can of mushroom soup!. Make bisquick according to the directions and pour it on top!. Pop it in the oven and cook till the bisquick is golden brown!.

Or how about chicken soup!? Not your regular stuff though!. Get some pasta noodles, add cubed chicken, add cauliflower, baby carrots, and any other vegetable you like, let this boil up (if you like veggies to be somewhat crunchy don't add them till the end) and add either a hot and sweet sauce or just a hot sauce!. Serve in big bowls piping hot with bread!.

Or perhaps cheesy stuffed chicken!? Take the chicken breast, slice it lengthwise but not all the way through!. Put bleu cheese, goat cheese and sour cream in a bowl and mix!. stuff the chicken breasts!. If they are large you will want to take some string and wrap them around and make the slits face the top!. Bake in the oven till finished!.

Or you can make fried chicken! I make Maryland fried chicken!. This is covered in flour, dipped in buttermilk, then covered in breadcrumbs!.Www@FoodAQ@Com
