What to do if if jelly doesn't set?!


Question: What to do if if jelly doesn't set!?
I made muscadine jelly following a recipe just for muscadines!. 24 hours later it did not set!. Instead of the sure gel brand pectin I used the ball brand pectin for the first time!. What can I do to get the jelly to set (foolproof)!? Has anyone had problems with the ball brand pectin!? Can I now try using the sure gel brand to get it to set after using the ball brand!?Www@FoodAQ@Com


Answers:
You will have to recook the jelly!. Place it back in your pot and boil it until it reaches 220* F!. You will not have to add any other pectin!.

It is very important that the temperature reaches 220* or it will not gel properly!.

And regarding the difference between the 2 brands of pectin, I have used them all and find that they all perform the same!.

I've only used the sure gel so I don't know if there are problems with the ball brand!. I do remember seeing instructions with sure gel for problems with setting up so I think you can get sure gel and give it another try!. Www@FoodAQ@Com
