Rich and Simple French Onion Soup --
"We have been trying French onion soup in restaurants for years and my family and friends agree none can compare to my recipe for taste and simplicity of preparation!."
INGREDIENTS
1/2 cup unsalted butter
2 tablespoons olive oil
4 cups sliced onions
4 (10!.5 ounce) cans beef broth
2 tablespoons dry sherry (optional)
1 teaspoon dried thyme
salt and pepper to taste
4 slices French bread
4 slices provolone cheese
2 slices Swiss cheese, diced
1/4 cup grated Parmesan cheese
DIRECTIONS
Melt butter with olive oil in an 8 quart stock pot on medium heat!. Add onions and continually stir until tender and translucent!. Do not brown the onions!.
Add beef broth, sherry and thyme!. Season with salt and pepper, and simmer for 30 minutes!.
Heat the oven broiler!.
Ladle soup into oven safe serving bowls and place one slice of bread on top of each (bread may be broken into pieces if you prefer)!. Layer each slice of bread with a slice of provolone, 1/2 slice diced Swiss and 1 tablespoon Parmesan cheese!. If you would like to make an authentic tasting soup, it will take some time, this is what you have to do to get that real flavourful taste!.
Thinly slice 5 medium large yellow onions
In a dutch oven coat the bottom of pan with 2-3 tblsp olive oil
Heat oil over medium high heat, once hot add onions
allow onions to cook WITHOUT stirring for 2 minutes
Now reduce heat to low and allow to cook WITHOUT stiring until onions are transparent and you see the brown caramelization on the bottom of the pan!. This caramelization is going to give you the authentic flavor you want in the soup!. This process will take up to 1/2 an hour or maybe more!. Why you don't stir is so that the onons can sweat and make that caramel coating, if you stir it will be ruined, so
resist the urge!. Once you have the caramel coating on the bottom of the pan add 3 tblsp of butter and stir!. next add 3 tblsp of flour and quickly stir making sure that there are not flour lumps!. Now add your beef broth!. Stir and try to get every last bit of the brown off the bottom of the pan, increase the heat up to medium and allow to slowly simmer, next, add a good splash of sherry or red or white wine!. Taste the soup add pepper and salt if needed!. Have ready some sliced french bread which is really dry and hard!. Ladle your soup into your onion soup bowls and top with the bread and some grated cheese, the authentic cheese to use would be gruyere but swiss or even cheddar or mozzarella work just fine!. Put the soup bowls on a cookie sheet and place in the oven uder the broiler until the cheese has browned about 3-5 minutes!.

Ok, so this is not "French" onion soup, which I absolutely love, but since we are on the subject of onion soup, you should give this recipe a try!. It is wonderful!. If you cannot find Maui onions, the closest would be Texas sweet onions!.
Maui Onion Ginger Soup
Serves: 8
I N G R E D I E N T S
6 tablespoons unsalted butter
8 Maui onions, thinly sliced
1/4 cup peeled and chopped fresh ginger
8 cups rich chicken stock (see note)
1 cup dry white wine
8 sprigs thyme
1 cup half-and-half
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
I N S T R U C T I O N S
In a large stockpot or soup kettle, melt the butter over medium heat!. Add the onions and ginger, decrease the heat to medium-low, and cook, stirring often, for about 20 minutes, until the onions are translucent!. Do not all the onions to brown or the soup will become bitter and dark!.
Add the stock, wine and thyme, increase the heat to high and bring to a boil!. Decrease the heat to low, cover partially, and cook for about 1 hour, until the onions are completely soft and falling apart!.
Remove the thyme sprigs and discard!. Working in batches, puree the soup in a food processor or pass it through a food mill!. Return the puree to the pot and add the half-and-half, salt and pepper!.
Place over medium heat and heat and stir for about 1 minute longer, until heated through!. Ladle into warmed bowls and serve immediately!.
Note:
Store-bought chicken broth can be used, but, if not making your own, Gannon suggests asking if the meat counter at your supermarket sells chicken, meat and fish stocks to make such dishes taste more homemade!.

Start with good quality beef broth!. Chop a large onion so that you have medium size pieces (not too fine)!. Add broth to a 4 quart pot and simmer with 1/2 cup of red wine or sherry!. Sautee onions in 1 tbsp of butter until transparent, then add to beef/wine mixture!. Cook until onions are done and the alcohol has cooked out of the soup!.!.!.about 15 to 20 minutes!. Put soup into individual crock style bowls and top with a large chunk of toasted bread!. I usually just slice a large yellow onion and grill it til it becomes tender!.
Then add a can of beef broth and a can of chicken broth!. Then let it simmer for about half hour!.
