Question: Need a good recipe for chicken breast!?
i usually marinate it in soy sauce and italian dressing the cook in foil packet but i want to try something new!.Www@FoodAQ@Com

Quick Chicken Parmesan

4 Boneless Chicken Breasts, pounded flat
1 jar Spaghetti Sauce (I use Prego mushroom and garlic)
3 oz!. Mozzarella Cheese, grated
2 cups Italian Bread Crumbs
2 oz!. Parmesan Cheese
1/2 tsp garlic salt
1 egg, plus 1 tbs water, slightly beaten


Mix Italian breadcrumbs, Parmesan cheese, and garlic salt together in bowl!. Beat 1 egg in another bowl, 1 tbs water and a dash of garlic salt!. Dip chicken in egg, then in crumbs and fry in oil until brown on each side (10 – 15 min each side)!. Pour spaghetti sauce over chicken and sprinkle with cheese, cover so cheese melts and serve!. Makes 4 servings!.


Serving Suggestions:

I serve this with Fettuccini Alfredo and garlic bread!.


Creamy Fettuccini Alfredo

1 – 8 oz!. Package Philly Cream Cheese (I use the light version – 1/3 less fat), cubed
? cup (3 oz!.) fresh grated Parmesan cheese (I like De Giorno, don’t use Kraft)
? cup margarine (I use I Can’t Believe It’s Not Butter Light)
? cup milk or half and half (I use 1% or 2% low fat)
8 oz!. fettuccini, cooked, drained (I use the fresh Contadina low fat one)


In large saucepan, combine cream cheese, Parmesan cheese, margarine and milk!.
Stir over low heat until smooth!. Add to drained fettuccini and toss lightly!. Sprinkle with fresh Parmesan cheese if desired!. Makes 4 servings!.

Baked chicken
Marinated the chicken breast with Olive oil, red wine (you can use white also) oregano, soy sauce, minced garlic!. Put them in an oven proof dish, the marinated should be juicy!. Bake them in low heat for about 20 minutes!. Served them with stew potatoes, mash or rice, what remains from the marinated pour it over when serve!.

Honey and Lemon chicken
In a bowl marinated the chicken breast with honey, lemon juice,olive oil, and oregano (you can use italian herbs too)!. cover it with foil and leave them in the fridge for about 45 minutes!. Make chicken Cordon Bleu: pound the chicken with a meat mallet-I put waxed paper down on the counter first- don't make it too thin just where it is more like apiece of cubed steak!. Then, I put a thin slice of ham, a piece of swiss cheese, roll it up and skewer it with a large tooth pick!. I then dip it in creamy ranch dressing, and then dip it in Italian seasoned bread crumbs!. Put it on a baking pan and in a 350 degree oven!. I cook it till the juice is clear and the bread crumbs are crunchy!. For a difference- you can add some chopped broccoli to the middle also!. Bruschetta Chicken Skillet
1/4 cup KRAFT Sun-Dried Tomato Dressing
4 small boneless skinless chicken breast halves (1 lb!.)
2 large red peppers, chopped
2 cloves garlic, minced
2 cans (14-1/2 oz!. each) pasta-style or Italian-style diced tomatoes, undrained
1/2 cup water
2 cups instant white rice, uncooked
1 cup KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese 1 large tomato, chopped
2 Tbsp!. chopped fresh basil
HEAT dressing in large skillet on medium heat!. Add chicken, peppers and garlic; cover!. Cook 10 min!. or until chicken is cooked through (165oF), turning after 5 min!. Remove chicken from skillet; cover to keep warm!.

ADD canned tomatoes and water to skillet!. Stir in rice; bring to boil!. Reduce heat to low; simmer, uncovered, 10 min!. Meanwhile, combine cheese, chopped tomatoes and basil!.

RETURN chicken to skillet; sprinkle with cheese mixture!. Cover!. Cook 5 min!. or until chicken is heated through and cheese is melted!.

Take your chicken breasts, slice them into thin, bite sized pieces, and start them cooking in a large skillet!. Then add your favorite jar of pesto - we like sundried tomato - and 32 oz of chicken stock!. Stir that together, then add 1 box of Penne!. Cover and cook on med low till the pasta is done!. Top with fresh parm cheese, and serve with sauted garlic broccoli!.

In less than 30 min you've got dinner!.

Another easy one is just as easy!.

Chicken breast, sliced thin and bite size!. Start cooking in large skillet!. Add 32 oz of chicken stock and 1 box of Penne!. Cover and cook on low for about 8 minutes!. Add lots of broccoli!. Cover again and cook for another 5 min!. Add 1/2 pint of heavy cream and 1 bag of mixed Italian cheese (I just use the pre-bagged blend), stir in till cheese and cream combine!.

1 pot meal, again, less than 30 min, and dinner is done!.Www@FoodAQ@Com

Chop up some drained artichoke hearts and mix with crumbled feta cheese and a little thyme!. Make a pocket in the breast, season with salt and pepper, and stuff with artichoke mixture!. Bake until cooked thru!. Make a sauce using some of the artichoke liquid, white wine, butter, and dijon mustard!. Serve with rice pilaf and fresh asparagas!.Www@FoodAQ@Com

Easy-peasy!.!.!.!. Tequila-Lime chicken

1 pkg Chicken breast
2 shots tequila
1/2 cup olive oil
1/4 cup lime juice
2 tbsp cilantro
2 tbsp garlic
salt & pepper to taste
