Well my Mother-In-Law is an Italian so, my fav!. are:-

*Straccetti con la Rucola---Little Beef Tatters with Arugula
a steak or tri-tip, about 1 lb (450 gr)
2 - 3 tablespoons extra-virgin olive oil
1 garlic clove, sliced
pinch of crushed red pepper, optional
a bunch of arugula salad (approximately 1/2 lb (400 gr)
salt
Trim away the fat from the meat as much as possible!. Slice the meat diagonally very thinly, to obtain small meat tatters!.Put olive oil, garlic and red pepper in a skillet!. Turn heat to medium!.
When the oil is hot, but before the garlic starts coloring, add the meat!.
Mix thoroughly turning the meat pieces over several times, until uniformly browned!. Don’t overcook the meat, otherwise it will toughen!.
Add the arugula and mix it with the meat!. The vegetable will look like a large quantity, but it will reduce very fast as soon as it will feel the heat of the pan!. Add salt!.The vegetable will loose some liquid in the pan!. Cook briefly on medium heat to evaporate the liquid!. Serve hot!.

*Fasciatelle---Sicilian Almond Filled Cookies
---for the dough---
4 cups all purpose flour
2/3 cups sugar
1 teaspoon baking powder
1 teaspoon salt
16 tablespoons unsalted butter, cold diced
4 eggs
--for the almond filling--
12 oz (300 gr) whole unblanched almonds
1 cup honey
1/2 teaspoon ground cinnamon
---for finishing---
honey
2 oz (60 gr) toasted sliced almonds

--preparing the dough---In the bowl of a food processor fitted with a metal blade, place flour, sugar, baking powder, and salt!.Add the butter and pulse until the mixture is fully incorporated but still inconsistent!.Wrap the dough in plastic and put in the refrigerator!.Add the eggs and continue to run the blade until the dough is fully combined and has a shape of a ball!. Transfer the dough to a work board!.
---Preparing the filling---Place the filling in the middle of each strip of dough !. !. !.Place the almonds in a food processor fitted with a metal blade!. Run the blade until the almond is finely ground!. Add honey and run the blade until formed a smooth paste!. Transfer to a bowl!.
Preheat oven 350 F!. Remove the dough from the refrigerator and place on a work surface!. Cut it in four pieces!.
Place each piece on a floured surface and using a rolling pin flatten to a square about 12 inches by 12 inches!.Cut the square in strips about 1 1/2 inch (4 cm) wide and 12 inches long!.!. !. !. !.and then close it folding the dough on itself!.
Cut the folded strips in 4 inches (10 cm) pieces!.Transfer to cookie sheets covered with parchment paper!. Bake for about 15 minutes or until golden!.
Before serving drizzle some honey on the cookies and spread with sliced almonds!.

*Mozzarella in a carriage (a!.k!.a!. Mozzarella in carrozza)

Mozzarella in a carriage or, as we say in Italy, mozzarella in carrozza is a recipe that comes from the South of the country!. It is a slice of mozzarella, sandwiched between two slices of bread and then fried!. Usually it is eaten as a snack or starter and it is very simple to prepare!. It is important you use top quality ingredients when making it otherwise it will be no more than a tasteless fried sandwich!
8 Slices of bread about 8-10 mm thick
1 Buffalo mozzarella ball (with one ball you will make 4 slices)
3 Eggs
30 ml (2 tbs) Milk
4 Anchovy fillets (alternatively 4 little slices of cooked ham)
Salt and ground white pepper for seasoning
Light olive oil for frying (do not use sunflower oil!)

Note: speaking about bread, in Italy, for practical reasons, it is quite common to use "pan carre`"!. This is a readily available soft white bread you can buy in any bakery or supermarket and it is usually sold already sliced!.
However, considering that the recipe comes from southern Italy, the tradition there is to use a more rustic bread like "pane pugliese", alternatively you can try "pane toscano" or any equivalent country bread especially something homemade!.
It is not necessary to have fresh bread; in the past people did not waste anything and the use of stale bread in recipes was a common practice!. The loaf of bread in the picture above is one I had made with my bread machine and it is a couple of days old!.

Cut the slices of bread!. You need 8 slices to serve 4 persons!.Pair the slices putting one on top of another and trim the edges to get rid of the crust!. also, the two slices must match in size!.
Cut the mozzarella ball into 4 slices like this!.Pat dry the mozzarella slices using kitchen paper!.
Fill the pan with olive oil and start heating the oil!.While the oil is getting hot, put the eggs in a large bowl and season with salt!.
Season with pepper!.Stir with a fork for a few seconds!.Add the milk!.Stir again for a few seconds!.
Take two slices of bread and top one slice with mozzarella!. The slice of mozzarella has to be smaller than the slice of bread so that the two slices of bread can be joined and encase the mozzarella!.

Italian Wedding Soup

SERVES 4

Ingredients
1/2 lb lean ground beef
1 egg, slightly beaten
2 tablespoons breadcrumbs
1 tablespoon parmesan cheese
1/2 teaspoon dried basil
1/2 teaspoon onion powder
5 3/4 cups chicken broth
2 cups chopped escarole or chopped spinach
1/2 cup orzo pasta, uncooked
1/3 cup finely chopped carrot
grated parmesan cheese
Directions
1In medium bowl combine, meat, egg,bread crumbs, parmesan cheese, basil& onion powder; shape into 3/4" balls!.
2In large sauce pan, heat broth to boiling; stir in spinach, orzo, carrot& meatballs!.
3Return to boil;reduce heat to medium!.
4Cook at slow boil for 10 minutes or until orzo is tender!.
5Stir frequently to avoid sticking!.
6Serve with additional Parmesan cheese sprinkled on top!.

Pasta E Fagioli (Italian soup) with Italian Sausage
1 hour | 15 min prep
A delicious version of this popular Italian soup!. Adding the sausage (regular or turkey) makes it a satisfying meal if served with a nice warm baguette!.
SERVES 4 -6

Ingredients
1 tablespoon olive oil
1 onion, chopped
2 cloves garlic, finely chopped
1 carrot, peeled & chopped
1 stalk celery, chopped
1 lb sweet Italian sausage link or hot Italian sausage, casing removed and crumbled (can use turkey sausage)
2 teaspoons dry oregano
1 tablespoon dry basil
1-2 teaspoon red pepper flakes, to taste
1 1/2 cups canned chopped tomatoes with juice
3-4 cups vegetable stock or chicken stock
1 can progresso cannellini beans
1 cup ditalini or small shell pasta
2 tablespoons chopped flat leaf parsley
parmesan cheese
Directions
1Heat olive oil in a large heavy pot over medium high heat!.
2Cook onion in oil 2 minutes!.
3Stir in garlic, celery and carrots and cook for 3 minutes!.
4Add and brown crumbled sausage!.
5Add basil, oregano and red pepper!.
6Toss to coat!.
7Stir in tomatoes and stock!.
8Bring to a boil!.
9Reduce heat and simmer 30 minutes!.
10If necessary, add an additional cup of stock or water and stir in beans and tiny pasta!.
11Simmer for 6- 8 minutes or until pasta is tender!.
12Stir in parsley and serve hot with grated Parmesan cheese!.

Chicken Italianio

3 lbs chicken breasts, cut up
3-6 tbsp salad oil
12 garlic cloves
1/2 cup dry white wine
2 tsp salt
1/2 tsp pepper
1/2 tsp dried rosemary leaves
1 medium-sized onion, sliced
4 medium-sized tomatoes, cute into wedges
1 8 oz pkg spaghetti

In 12-inch skillet over medium-high heat, in hot salad oil, cook chicken and garlic until golden brown on all sides, about 20-25 minutes!. When done, add wine, salt, pepper, rosemary, onion and half the tomato wedges; over high heat, heat to boiling!. Reduce heat to low; cover and simmer 15 minutes or until chicken is fork-tender!. Skim fat from liquid in skillet (if there is any)!. Add remaining tomatoes; heat through!. While this is simmering, prepare spaghetti as label direct!.

To serve, drain spaghetti; place on large platter!. Spoon chicken mixture on top of spaghetti!.
