Question: How do I cook rice so it's nice and fluffy!?
I just cook it in boiling salted water and it sticks together!. What do I need to do to make it light and fluffy!?Www@FoodAQ@Com

You MUST use a lid! Use 2 cups water, 1 cup long grain rice, like Mahatma!. Bring water and a little salt to a boil, stir in rice!. Put lid on and return to the boil (don't walk away, this will take only seconds)!. Remove lid, stir well, then replace lid, lower heat to VERY low, and set timer for 20 minutes in a humid climate, 25 min!. if in a dry climate!. DO NOT PEEK! Leave lid on the entire time!. When timer goes off, turn off heat; rice should be nice and fluffy!.Www@FoodAQ@Com

I don't add the salt until the rice is done!. also, you may want to cut down on the water that you use!. I know that the ratio is 2-1, but I always go a little shy on the liquid to ensure that my rice is fluffy!. also, make sure that you are using a tender hand when fluffing with a fork!. If you overwork the rice while it is still hot, it tends to stick together!.Www@FoodAQ@Com

it usually means your using too much water!. If you are using a rice cooker, use less water!. I use the tip of my finger to determine how much water to add!. If the water level is larger than the length of the tip of your finger, it's too much water!. It should just be just below the crook of your fingertip!.

if you are using a saucepan, use the same water determination!. boil the water then turn the heat down, and cover the pot!. watch it until the water boils out!.Www@FoodAQ@Com

There is an older recipe called feathered rice!. You will boil water, pour it over rice and then bake it for a time!.

The rice grains kind of explode and the baking finishes cooking them gently!. I is amazing how light and fluffy it turns out!. People notice the difference right away and everyone comments on it!.

My fave is microwaved rice!. These times are based on ours, which is either 900 or 1000 watts, I forget!.
Put I cup rice in a big glass bowl or glass casserole dish!. Add a little less than 2 cups water, and any seasonings you want!. Sometimes I put in a cup of frozen mixed vegetables!. Put bowl in nuker and cover with piece of waxed paper!. Put on high, 100%, for six minutes!. Then put it for 11 minutes at 60%!. Let rest a few minutes, fluff with a fork and see if it needs another minute or so!.

Alternatively, it's great when done in the oven, too, especially if you have something else baking in the oven!.
In a roaster or casserole dish, combine rice and water!. Bake at 350 degrees for about 40 minutes or so!.Www@FoodAQ@Com
