That is one classic way to prepare Steak au Poivre, but not the only one!. I posted one on my French Cuisine site within Suite101 which needs not cream!.
Don't let classic presentations imprison you!. It's wonderful to taste them and see what elements make them enduring classics!. But then by all means give yourself the freedom to tweak them a little or a lot to make what might be the next classic!.!.!. or at least and interesting meal!. Www@FoodAQ@Com
