I also usually do my ribs in the crock-pot (country style)!. I cover the bottom of the crock with balled-up foil to prevent the meat from sitting in the fat while cooking, and then add as aromatics a bottle of mexican beer, large handful of chopped cilantro, couple cloves of garlic, and one large chopped onion!. Cook on low for several hours!.
Once ribs are done, remove them to a casserole type dish, cover them is a BBQ sauce (either homemade or a specialty), and put in the oven for about 15 minutes until the BBQ sauce is nice and bubbly, stirring/turning as needed!.
NOTE: If more beer is needed, never add more beer to a hot crock without heating it first! My expensive 6-1/2 qt!. multi-setting crock cracked straight in half when I added a room temperature beer, muchless to the middle of the dish where it went straight over the meat and down into the middle of the crock!. Luckily I was the only one home, or the cuss jar would have been full ;)Www@FoodAQ@Com
