Question: How do I correct this cooking fault!?
Im making Grilled vegetable salad!. And the vegetables have black patches!. What should I do!?Www@FoodAQ@Com

Try scraping off some of the excess burnt skin with a paring knife or with your fingers!. Next time you grill vegetables though, remember to oil well the grill and the vegetables with like olive oil or any kind of oil you like but don't over oil them either and make sure the grill isn't too hot!. This is most likely what happened to your vegetables, you probably had the grill too hot for a veggie!.

You can cut them out if they're actually deeply charred, but black patches on roasted veggies is usually a sign that they're properly cooked, as long as it's only skin deep, and they give the veggies a carmelized taste that most people love!. Without some burnt spots, roasted veggies are usually undercooked!.Www@FoodAQ@Com

You can try putting a little of the vinegar (if you are using it in your dressing as well) over them and give them a toss in a bowl!. Sometimes that removes or lightens the black spots!. Then transfer them (minus the stuff left in the bowl) to another bowl and put your actual dressing on them!.

If you are not going to put vinegar in your dressing you can try a little hot water instead!. Pat them dry before dressing!.Www@FoodAQ@Com

Don't freak out!! It's just the skin that got burned!. Put them into a paper bag, plastic bag, covered dish - ANYTHING that you can seal up for a little while!. Let the veggies cool and steam!. When they are cool to the touch, just remove the skin from the veggies, and prepare them for your salad!.

Don't rinse them in water after you peel your veggies though - this will wash away the smoky grilled flavor that is so yummy!Www@FoodAQ@Com
