This one gets 10/10 for quick, easy, tasty and economical:

INGREDIENTS:
1 pound ground beef
1 onion, chopped
1/2 red bell pepper, chopped
1/2 (6 ounce) can tomato paste
1/2 cup water
1 tablespoon Worcestershire sauce
2 cloves garlic, minced
1-1/2 teaspoons chili powder
1/2 teaspoon paprika
1/2 teaspoon ground cumin
1/2 teaspoon distilled white vinegar
1-1/2 tablespoon brown sugar
1 teaspoon dried oregano
1/4 teaspoon salt, or to taste
1/4 teaspoon ground black pepper, or to taste
4 hamburger buns, split

PREPARATION:
In a large, high-brimmed skillet brown the ground beef for 5 minutes over medium-high heat!.
Add the onion and red bell pepper; saute for 5 more minutes, or until onion is tender!. Drain the fat - who needs it!?
Mix in tomato paste and water, stirring until paste is dissolved!. Stir in Worcestershire sauce, garlic, chili powder, paprika, cumin, vinegar, brown sugar, oregano, salt and pepper!.
Continue to heat for 5 to 10 minutes, or until the mixture is nice and thick!.
Split your hamburger buns and spoon the beef mixture on them!. I like to toast the buns a little first, to make them a little crispy!. Add a little olive oil to the skillet and place the halves face-down for a minute or so until they are lightly toasted!.

Here is a great Southern recipe for the real comfort food:

Chicken Bog
6 cups water
1 tablespoon salt
1 onion, chopped
1 (3 pound) whole chicken
3 1/2 cups chicken broth
1 cup long-grain white rice
1/2 pound smoked sausage of your choice, sliced
2 tablespoons Italian-style seasoning
2 cubes chicken bouillon

DIRECTIONS
Place water, salt and onion in a large pot!. Add chicken and bring all to a boil; cook until chicken is tender, about 1 hour!.
Remove chicken from pot and let cool!. Remove skin and bones and chop remaining meat into bite size pieces!.
Skim off fat from cooking liquid and measure 3 1/2 cups of this chicken broth into a 6-quart saucepan!. Add rice, chicken pieces, sausage, herb seasoning and bouillon to this saucepan!. Cook all together for 30 minutes; let come to a boil, then reduce heat to low, keeping pan covered the whole time!. If mixture is too watery or juicy, cook over medium low heat, uncovered, until it reaches the desired consistency!. Stir often while cooking!.

Step: 3 Add salt and pepper to taste!. Gently bring the contents to a simmer!. As soon as it is simmering, take off the heat and pour over the meat and kidneys in the pot!. Add the thyme and bayleaf!. Carefully lay the potato slices on top of the meat to form a cover by overlapping the slices!. Just like the tiles on a house roof!.
