How to cook Lentils Colombian style?!
For the Colombians under you, how do you cook lentils!? I remember I had a housekeeper she was Colombian from Cali, and she used to cook Lentils oh so yummy! She never really got to give me the recipe!. I know she added potatoes, garlic, onions, and even some pieces of banana all cut up as small as the lentils themselves!. Anybody know where I can find such a recipe or a site where I can find it!?

PLANTAIN AND LENTIL STEW
Serves 4!.
Ingredients:
1 cup lentils
1 tablespoon olive oil
1 small onion, chopped
2 cloves garlic, chopped
1 large tomato, cored and chopped
1-1/2 cups pineapple cut into 1/2-inch cubes
2 plantains, peeled and cut into 3/8-inch slices
1 teaspoon salt
Cooked rice
Procedure:
In a large saucepan, cook lentils in 2 quarts water about 45 minutes until just barely tender!. Drain reserving liquid!.
Wipe out saucepan and heat oil over moderate flame!. Add onion and garlic and cook until onion is soft, about 4 or 5 minutes!. Add tomato and cook a few minutes!. Add lentils, about 1 cup of lentil broth, the pineapple, plantains, and salt!.
Cook about 20 minutes until the stew thickens slightly!. Check for salt and serve over rice!.
LENTEJAS (Lentils)
Serve: 4 people
Before starting to cook: Soak lentils in water overnight!.
Ingredients:
* 2 cups of lentils
* 1/2 cup of chopped celery
* 1 small red onion cut into four quarters
* 1 teaspoon of chopped coriander/cilantro
* 2 large potatoes, cut into small cubes
* 1 tablespoon of oil
* 1/2 lb of gem squash (auyama), cut into small cubes
* 1/2 teaspoon of mashed garlic
* 1 pinch of oregano
* Salt
Preparation:
In a pot heat the oil, add oregano, onion, garlic, celery and herbs!. Stir!. Add the potatoes and gem squash!. Stir to incorporate all the ingredients!.
Sautee at medium heat for 2 minutes!. Add the lentils (without the water) and stir until the lentils are very tender!. Add 2 cups of water and simmer at low heat until it reaches a creamy consistency!. Adjust salt to taste!.
Serve with arroz blanco, ensalada verde and meat of your choice!.
ARROZ CON MENESTRA
lentil stew with rice
Ingredients:
3 tbs canola oil
1 red onion, diced
1 bell pepper, diced
3 tomatoes, diced
6 garlic cloves, minced
2 tsp cumin
3 tsp salt
1 tsp achiote
4 tbs chopped cilantro
7 cups of water
1 lb lentils
Preparation:
Heat the canola oil on medium heat in a large sauce pan!.
Add the onion, bell pepper, tomato, garlic, cumin, salt, achiote and 2 tablespoons of the cilantro to make a refrito for the stew!.
Cook, stirring occasionally, until all the ingredients have softened, about 5 minutes!.
Add the water and increase heat to bring water to boil!.
Add the lentils and reduce the heat to medium low, cover partially and cook until the lentils are tender, stir in the remaining 2 tbs of cilantro and remove from the heat!.
Serve with Ecuadorian style cooked rice, carne asada o carne frita (fried thin beef steaks), fried ripe plantains or fried green plantains, and a small salad or avocado slices!.
