* Before you begin,if you don't already know, Cod is usually bought salted and dried!. What you need to do to make many recipes with Cod fish is soak it in cold water for a day or two changing the water about 2 times a day!.
INGREDIENTS:
* 3-4 Cod steaks, depending on thickness
* 6-8 large potatoes cut into rounds ( potato chip style only thicker)
* flour, butter and milk to make a rue
* 3 large onions
* 2 cans of thick cream ( carnation brand)
* oil to fry the potatoes
* grated Parmesan cheese
METHOD: Preheat oven at 450 degrees!.
* Begin by boiling the Cod for about 10 minutes set aside and allow to cool!.
* Fry the Potatoes and set them aside as well!.
* In the meantime cut 2 onions into rounds and fry them until they are soft!.
* In a separate pot, make the rue!. Begin by adding 2 tbsp!. of margarine, to
that you add 1 1/2 tbsp!. of flour and stir constantly, as this mixture begins
to thicken, slowly add milk, (stirring constantly) until the mixture is loose!.
to this rue you now add the 2 cans of thick cream along with the previously
fried onions!. Stir well until fully incorporated!. Set aside!.
* Cut up the remaining onion into rounds and place in a bowl!.
* Clean the Cod of any skin and bones, and separate into little pieces!.
* In a baking dish begin by layering the bottom with the potatoes!. Layer the
potatoes with Cod, then layer the cod with onions!. Continue in this fashion
until your top layer ends in potatoes!.
* Pour the heavy cream mixture over the top layer of potatoes and sprinkle grated
Parmesan over the mixture!.
* Bake in the oven for about 20 min!. or until top is lightly browned!.
