A deep fat fryer can be a big, DEEP, heavy metal pot!. You put fat in it - preferably vegetable or corn oil, and peanut oil also works well because it doesn't burn at high temperatures!. Keep the oil deep enough to cover the food you will put in it!. This means it needs to be at least 1/3 full because when you add the food it sometimes bubbles up!. You heat this oil to 350 to 400 degrees F using a thermometer that is just for this!. Frying in small batches will insure that the temperature of the oil does not drop so much that the food absorbs a lot of oil and get soggy!.
If you buy/use a deep fat fryer you will find that they have a thick wall - like the Fry Daddy, or an insulated wall which has an outside wall and an inside wall!. The inside will be metal and the outside can be painted or decorated!. Both have electric plugs!. The Fry Daddy comes with a metal slotted scooper and has a non-stick interior!. The deep fat fryer has a metal basket you put the food in and usually does not have a non-stick interior!. The Fry Daddy has no temperature control!. You just put the oil in, heat it up by plugging it in and when the oil is hot enough, you put the food in and watch it!. It is small-ish and cooks quickly!. The other deep fat fryer has a temperature gauge so if your recipe has a temp!. to cook it at then you set it to that!. When I want to know if the oil is hot enough I drop one drop of water in the oil!. It spatters like crazy, and the oil is hot!. I could also use the thermometer, but when I can't find it, the water works okay!. The Fry Daddy uses less oil as it is smaller!. Using a large pot or an electric deep fat fryer uses about the same amount of oil!. Both come with lids for storage, but you don't use it to cook with!. I drain my oil out every time and store it in a container with a lid!. You can store it in the refrig to keep it longer!.
