I want to bake a chocolate chilli cake! What chilli powder do I use?!
I've found a few recipes online for chocolate chili cake (here are a few examples):
http://splendidtable!.publicradio!.org/rec!.!.!.
http://cupcakeblog!.com/index!.php/2005/07!.!.!.
http://www!.celtnet!.org!.uk/recipes/miscel!.!.!.
A few of them specify 'ancho' chili powder - but I'm not sure I'm going to be able to get this down at Tesco or Sainsbury's!
What chili would you recommend using!?
Could I make a standard chocolate sponge cake and add chilli into the mix!?
It's for a birthday (my friend is having a chilli theme party), so ideally I'd like a cake I can put icing/frosting/buttercream on but I'm not a particularly confident baker, so not used to experimenting really!
Appreciate any advice you can give me!.
Thank you!.Www@FoodAQ@Com

I think the best thing to use would be chilli flakes, that way nothing is added to them like vinegar, they're just dried chilli!. I'm not sure how well the chopped chilli would work because it tends to be a little bitter when you cook it and tastes a little acidic!. Dried chili is a little sweeter but still has the spice!. If you want you could use a mortar and pestle to grind it up!!!

the level of heat for an ancho chili pepper is quite low, it's more about flavor and not heat!.
The flavor is more of a smokey taste!.
You could sustitue a New Mexico chili pepper but the heat will be higher!.
Or, make your own powder in a spice grinder from whole dried ancho peppers!.
You could use whole dried ortega peppers in the grinder too!.
Crushed red pepper is too hot!.
Cheyenne pepper is way too hot!.
Habinaro (scotch bonnet peppers) are so hot they can cause blisters in your mouth!Www@FoodAQ@Com

The simplest way would be just to incorporate a quarter or half teaspoonful of ground cayenne into the batter!. That's what I do, and in side-by-side comparisons, nobody's been able to tell the difference between mine and other folks' chocolate/chili cake!. The word "chili" is spelled with only one "L", by the way!.!.!.Www@FoodAQ@Com
I personally would not use powder, I would VERY finely chop 1 birds eye chilli (seeds removed first), and add this to the mix, that was the chilli flavour is not all the way through the cake, just a bit in every mouthful, which would give it a bit of extra kick, mmmmWww@FoodAQ@Com
