Meat tends to shrink as you cook it - especially ground beef since it has a lot of fat and the fat melts out while it cooks!. If you start out making them bigger than the bun, by the time they finish cooking and shrinking they will be about the same size as the bun!. That's basically the only trick to it!. Good luck!Www@FoodAQ@Com
I have a dandy recipe for Bleu Cheeseburgers posted on Suite101!. Even if you don't like blue cheese, you might be interested in this hint from the same article:
How to make flat burger patties: Grilling burgers tends to swell them up in the middle, making them a little awkward on the bun!. The outside cooks more quickly and the ligatures in the meat contract, sort of like tightening a belt!. You can avoid swollen patties by making a depression in the middle of the patty when you’re forming it, maybe an inch or two across!. That gives the meat a place to swell to!.Www@FoodAQ@Com

I also like to use worchiser sauce (or however you spell it) lol try different spices too it makes it taste different than just plain meat and cheeseWww@FoodAQ@Com
I too love a good cheeseburger!. My recipe is I take a package of Lipton onion soup mix and add to my meat!. Then I make a ball a bit bigger than my bun and mash it down between wax paper!. Then I either grill it or cook it on top of the stove!. This should work and it does for me!. I have been cooking for 45 years!.Www@FoodAQ@Com
