Potatoe cakes, recipe please?!
my gran used to make delicious potatoe cakes from left over mash, i know she used plain flour and lard, but i am in a country where i cannot buy lard or dripping!. Does anyone know how to make these delicious little treats without lard or dripping and what are the quantities needed of flour /salt/mash/margerine!?Www@FoodAQ@Com

Take the left over potatoes and mash well!. Pour in some hot melted butter and mix well!. Slowly add in some sifted flour, for lightness, until the mixture is malleable without sticking all over your hands!. It should be nice and smooth, a little like pastry!. Add a little salt and some freshly ground black pepper!. roll out with a lightly floured rolling pin and then cut into however many pieces you like!. Heat a frying pan until hot, then add some butter to melt!. Place the potato cakes in the pan and let brown on a medium heat!. check when they are golden and turn them over to cook the other side!. Serve on a hot plate, with lots of butter!. Not good for the figure really but delicious!.Www@FoodAQ@Com
Irish potato cakes
Serves 2-4
Preparation time less than 30 mins
Cooking time 10 to 30 mins
Ingredients
250g/8oz potatoes
salt and black pepper, freshly ground
? head fresh garden cabbage, finely chopped
90ml/6tbsp milk
50g/2oz bacon dripping or butter, plus extra for frying
125g/4oz wholemeal flour
Method
1!. Boil the potatoes in salted water until cooked!. Drain, mash and leave to cool!.
2!. Place the cabbage in boiling salted water and cook for a few minutes!. Drain and leave to cool!.
3!. Place the milk in a saucepan, add the bacon dripping and bring to the boil!. Add the cooked potato and cabbage and blend together while the mixture heats through!. Fold in the flour until the mixture comes away from the side of the saucepan!.
4!. Turn the mixture on to a cold surface and shape into cakes of approximately 5cm/2in diameter and 1cm/?in thick!.
5!. Cook in a little bacon dripping until brown and serve immediately!.

Try this one!.!.!.wont be like your Grans but still!.!.!.!.!.!.Boil and mash potatoes not leaving them too wet!. Add a little grated ginger, about two spring onions, 2 pieces of grated garlic and a handful of chopped coriander leaves a green deseeded chilli !. Salt and pepper!. Beat one egg into it and add some cheddar cheese!. Form into balls and shallow fry till golden brown!.
Or you can add some wetted bread slices in the mixture and deep fry the mashed potatoe patties!.!.!.!.delicious especially with coriander or mint chutney!.!.!.or even tomato sauce!.Www@FoodAQ@Com

I like with grated potatoes better but my Granny never threw any good food out either!.
No real recipe!.!.!.you just mix a little egg and flour and some grated or chopped onions up and fry!.
You can get a better "from scratch" result from grating big potatoes , carrots,a little celery,and onions and mix lightly together!.!.!.so it looks kinda right then add about a 1/2 cup of flour with a sifter (S & P) and a couple eggs - well just enough to hold together!. Depends on how many people!.!.!.!.

I make my potato pancakes (if this is the same thing) with grated potatoes, onion, garlic powder, salt, pepper, flour and egg!.!. fry them with vegetable oil and eat with either apple sauce or sour cream!. You want your mixture to be a little wet, so adjust flour accordingly!.
