i made a chocolate mole cake!. its a flourless cake, very dense, and very rich!. but super yummy!. i dont frost it, just serve it with some vanilla whipped cream!. or serve it with ur favorite ice cream!
Chocolate Mole Cake
1 lb dark chocolate
7 1/2 oz butter
3 dried chili’s-dried in oven
7 1/2 oz sugar
1 tsp cinnamon
1/2 tsp clove
2 oz pumpkin seeds-toasted
14 eggs
1 Tbsp vanilla extract
Melt the chocolate!. Heat the butter on the stove till it turns golden brown!. Grind chili’s, sugar, cinnamon, cloves, and pumpkin seeds in spice grinder till very fine powder!. Whip eggs, vanilla, and sugar/spice mix till very fluffy!. Add chocolate and mix till combined, then add butter slowly!. Pour into cake pan!. Bake @325 with a water bath till just set!. (its going to be very fudgy, so when you touch the top and it feels like firm jello, its done! dont try to do the crumb test) let it cool, and serve at room temperature or slightly warmed!. (if you warm it up too much, it'll get really soft!)

This is an excellent spice cake recipe!. We usually just sprinkle a little confectioners sugar on it after it cools, but you can use a simple buttercream frosting on it if you want!. That's what I do if I'm using it for a birthday cake!.
