I like to boil chicken in chicken broth, cut up some onions, veggies, mix up a packaged dough and drop the dumplings in when all the veggies are cooked through - leave the lid on for the dumplings!. It is always a hot!
Sometimes I have pounded boneless chicken then wrapped garlic, onion, parmesan cheese and bread crumbs inside, throw it in a pan until brown then transfer it to the oven!. When done, I take the chicken out of the pan and add butter and flour then some milk and make a gravy to pour over the top!. Serve with rice, mash taters or steamed veggies!.

One whole chicken, cleaned!. Any one of the next combinations!. Take your cleaned chicken and put any one of these combinations on the chicken!. Inside the chicken, put a lightly crushed sprig each of rosemary, thyme, sage!. A sprinkle of salt and pepper, a quarter of onion and a quarter of apple!. Discard these when the chicken is done!.
Cook covered in a 350 oven!. You'll need to adjust the time according to how much your chicken weighs!. I have tried every last one of these and my family thinks I a wide range of recipes!.

Plain old fried chicken, my way!. Roll some chicken in buttermilk, Roll and press it into a pan of flour with some ground black pepper in it & a little Lowery's if you like!. Now fry it in Crisco!. Then the most important part!. Fry it real good and right as it comes out of the oil and the chicken is still sizzling on it's own, shake a few drops of Tobasko on it!. The Tobasko will seep through the meat wile the sizzling is still going on!. This is good fried chicken!. Now drain most of the left over grease and make a little chicken gravy with the residual grease and crunchy skillet leftovers by adding some of that flower you were rollin the chicken in and adding some milk into the skillet!. Whisk it into a gravy and put on top of mashed potatoes or fried potatoes or any kind of potatoes!. If you don't have potatoes, make some toast and put it on that!.

Saute the chicken and cook through, then add to the sauce and simmer for about five minutes!. Serve over rice!.
Cheaters chicken parm - mix equal parts parmesan cheese and breadcrumbs together!. Season chicken strips/breasts, then cover in thin coat of mayo, and press into the breadcrumb/cheese mixture until coated!. Bake at 400 degrees until done!. These are all my personal recipes!. My friends have requested that I put these in a cookbook so I did and have given it to many people who really love all the recipes!. They are all really good and fairly easy!. I also include serving suggestions that my kids like to have with them, enjoy!
Chicken in Champagne Sauce
4 boneless chicken breasts
1 tsp thyme
1 tsp seasoned salt (Lawry’s)
1 tsp garlic salt or powder
6 tbs light margarine or butter
2/3 cup Asti Spumante or any sweet wine (use the cheapest you can find)
2 tsp flour (more if needed to thicken)
1 cup half and half or lowfat milk
Sprinkle chicken breasts with all seasonings!. Heat butter in frying pan!. Brown chicken!. Add Asti or wine!. Cover pan and simmer about 30- 40 minutes, turning twice, until chicken is tender!. Remove chicken and keep warm!. Thicken sauce with flour!. Stir in half and half and heat sauce!. Add chicken to sauce to coat!. Makes 4 servings
Serving suggestions: Serve with boiled red potatoes or mashed potatoes with sauce on top and steamed broccoli!.
Chicken and Sausage Jambalaya
5 to 6 hot links (or other hot sausages), cut into bite size pieces
4 to 5 boneless chicken breasts, cut into bite size pieces
garlic salt
pepper
1 tbs butter
1 cup chopped onion
? cup chopped celery
1 tsp minced garlic
2 cups white or brown minute rice
2 cups canned low sodium chicken broth
Place sausages in large deep pot with water to a depth of about 1 inch!. Cook over medium-high heat until water boils away, about 10 minutes!. Continue cooking the sausages until lightly brown!. Remove sausages with slotted spoon and set aside!.
Salt and pepper chicken pieces!. Add butter to pan and cook over medium heat until browned, about 5 minutes!. Remove chicken and set aside!.
Add onion and celery to pot and sauté them until they are soft, about 5 minutes!. Add the garlic and chicken broth, bring to a boil!. Add rice, reduce heat to low and cover!. Simmer for about 10-15 minutes!. Add reserved sausage and chicken, stir!. Makes 4-5 servings!.
Mushroom Chicken
4 boneless or bone-in chicken breasts
1 can cream of mushroom soup
1-8 oz container of sour cream (regular or light)
2/3 cup sherry
1 cup sliced mushrooms (optional)
1 tsp garlic salt
pepper to taste
Mix together everything but the chicken in a bowl!. Pour half or the sauce in a casserole dish!. Add chicken breasts and top with remaining sauce!. Bake at 350F for 1 hour!.
Serving suggestions: Mashed potatoes with sauce as gravy or red potatoes, vegetable, and Hawaiian rolls!. Can be made in crock pot!. Add sauce to the pot then add the chicken, coat with remainder of sauce!. Cook on low for 3-4 hours!.
Chicken Enchilada Casserole
1 – 1 ? lb boneless chicken, cut into bite size chunks
1 can cream of mushroom soup
1 - 8 oz carton sour cream
1 small can chopped Ortega green chiles
1 sml package flour tortillas, cut or torn in small pieces
8 oz jalapeno or regular jack cheese, grated
Cook chicken in skillet with a little water and ? tsp garlic salt or powder, until no longer pink Remove and reserve!.
In a bowl combine the next four ingredients, plus 6 oz of the cheese, add the chicken!. Mix well and place in greased casserole dish!. Top with remaining cheese and bake at
350 F for 1 hour!.
Serving suggestions: Mexicorn and Mexican rice!.
Quick Chicken Parmesan
4 Boneless Chicken Breasts, pounded flat
1 jar Spaghetti Sauce (I use Prego mushroom and garlic)
3 oz!. Mozzarella Cheese, grated
2 cups Italian Bread Crumbs
2 oz!. Parmesan Cheese
1/2 tsp garlic salt
1 egg, plus 1 tbs water, slightly beaten
Mix Italian breadcrumbs, Parmesan cheese, and garlic salt together in bowl!. Beat 1 egg in another bowl, 1 tbs water and a dash of garlic salt!. Dip chicken in egg, then in crumbs and fry in oil until brown on each side (10 – 15 min each side)!. Pour spaghetti sauce over chicken and sprinkle with cheese, cover so cheese melts and serve!. Makes 4 servings!.
Serving Suggestions:
I serve this with Fettuccini Alfredo and garlic bread!.
Cajun Fried Chicken or Pork
4-5 boneless chicken breasts, boneless pork chops
1 cup of self-rising flour, unsifted
1 tsp garlic salt
1 tsp cayenne pepper
1tbs Dijon mustard
1/3 cup Tabasco
? cup water
1 – 1 ? cups oil, for frying
Combine cayenne pepper, mustard, Tabasco, and water in plastic container or gallon size zip lock bag!. If you pierce chicken with a fork first it will be a lot spicier (don’t do this unless you like it HOT!)!. Place chicken in marinade, turning to coat well!. Marinate for no more than 1 hour, turning frequently!.
Combine self-rising flour and garlic salt in a plastic bag or container!. Add chicken to coat, one at a time is best!. I use tongs so my hands don’t get messy!.
Heat vegetable oil in large skillet on medium high heat!.
Fry chicken pieces, turning once, for about 15-20 minutes total!. Remove from pan immediately and keep warm!.Www@FoodAQ@Com
