Why is sugar considered a "wet" ingredient in cooking?!
I am watching Alton Brown's Good Eats on the Food Network, and I noticed that whenever he cooks he includes sugar in the "wet" team instead of the dry team!. Sugar is not a liquid, so why is it part of the wet team and not the dry team!?Www@FoodAQ@Com

AB actually says it is a dry ingredient!. But listen carefully to what he says as to the reason to putting it into the wet ingredients!. With fats and proteins the sugar helps incorporate lots of tiny fat globules with air bubbles between the fat and proteins like in eggs!. The sugar breaks up the fat in particular to make a fluffier and smoother product!.What he says makes a lot of sense when looking closely at what you are trying to do!. It generally is NOT considered a wet ingredient!. When you use recipes besides Alton Brown's you will notice that sugar is considered a dry ingredient!. It may become wet when you mix it with other ingredients, but it is not wet!. Sugar in a wet form would by syrup!. It is confusing when it should not be!. It is considered a wet ingredient because it is water soluble!. If you put it in with liquids like milk, it will dissolve completely and become a homogeneous solution!.

I agree that upon first glance, sugar is granulated and dry to the touch!.
