What is the purpose of butter in bread making?!
I want to make a bread loaf, like a white farm loaf, but all recipes call for butter, eggs, or oil, what are the purpose of these ingredients in the bread making process!?

I've made bread by hand for over a year now and I do not use any oil/butter and certainly no eggs in my white loaf!. I've cut the salt right down too and I have no problems at all!. I struggled to find the difference when any fat was added and decided to leave it out totally!.
As for it's purpose!.!.!.maybe I should find out!.!.!.but still won't add it!.
For a 2lb loaf tin I use:
500grms Strong White Flour
300ml warm water
5g easy yeast
5-10g salt
Mix all the dry ingedients
Add the warm water!. (I find 100-150ml boilding topped up to 400ml then adjusted back to 300ml is about right temp)
Stir together until it's too hard to do so and tip out contents onto work surface!. Knead together, Even if it feels sticky see if you can work it without adding more than a dusting of flour to your hands!. If not then add a touch more flour!. Knead for 8-10 mins!. Put in greased and floured tin, Score top and sprinkle on some flour!. Rise in an off cold oven with a bowl of boiling water for around 25-40 mins!. Remove proving loaf and heat oven to 220degrees c!. Bake for 20-25 mins and tip out of tin!. Cover with Cling Film straight away and leave to cool!. If you want a real crispy top ignore the film idea!. That just keeps the top soft until you finish the loaf!.Www@FoodAQ@Com

when oil and butter are both included in a baking recipe, the butter is usually added for flavor and the oil for not sticking to the pan!. Your going to need to follow the recipe to the letter when baking!. Making sauces, gravies and casseroles, soups, you can make it up as you go along!. But baking is more of a science!. If you make that recipe without butter, you should increase the oil to make up the difference and sacrifice the taste and texture!. It wont be as good with out!.Www@FoodAQ@Com
butter makes the bread moist, and makes it lighter and airier!. oil does the same thing!. eggs bond together all of the ingredients!. sorry, but all of these ingredients are necessary (except you can have butter without the oil, and the other way around) Www@FoodAQ@Com
