here is a recipe for something different!.!.

CHILIES RELLENOS BAKE

4 egg whites
1/3 cup all purpose flour
16 oz!. shredded Mexican blend cheese
1 cup evaporated milk
4-5 large green bell peppers (sliced half and blanched for 5 min in boiling water)
1 8 oz!. can enchilada sauce
Heat oven to 350F!.
Spray a 2 quart casserole dish!. In medium bowl, combine egg whites, milk, and flour; beat until well blended!. Place 1/2 the green peppers (opened up and layed out flat) in baking dish!. Cover with 1/2 of the egg mixture!. Spread 1/3 of the cheese on top!. Repeat layers, saving last 1/3 of the cheese!. Pour sauce on top of casserole!. Bake @ 350*F!. for 25 to 30 minutes!. Sprinkle with remaining cheese!. Bake an additional 5 minutes to melt cheese and until casserole is bubbly!.

you can make a sauce out of them to use on something else!. Roasted bell pepper coulis!.!.!.!.roast the pepper until the skin comes away from the meat of the pepper well!. Drain (if you didn't already de-seed the pepper), and puree the pepper until smooth comsistency!. transfer to a saute pan and add cream, salt and pepper!. simmer until thick and creamy!.

If you have red ones, the red bell pepper coulis goes really good with chicken!. Green ones go well with beef!. Good luck!Www@FoodAQ@Com

You can chop or slice them and put in freezer bags for later use in pasta sauce, chili or casseroles too! Truthfully, you can even freeze them some what whole to stuff later too!. I just cut the top off, clean out the insides, put them in plastic bags and freeze!. Just be sure to stuff them when they are still frozen, otherwise they get too soft to stuff!. Bake as usual and you're good to go!

I also make a salad out of tomatoes, cucumbers, sweet onions and peppers in a light italian dressing that keeps well in the fridge for several days!.

You can dice them up along with some tomato and onion and scramble them with eggs!. It makes for a yummy breakfast scramble or you can make it into an omelet!. Or!.!.!.you can cut the bell peppers and some onion into strips and get some chicken or beef and make fajitas!

There's also recipes you can find online to make "stuffed bell peppers", which are always good!

carve out the inside, buystuffing mix, a variety of ingredients that you prefer (veggies,meat, poultry, etc!.) put them into a bowl, stir, then put the mix into the carved out bell peppers, let them heat in the oven, put some cream cheese on top when you take them out of the oven!Www@FoodAQ@Com

you can make cheese pimiento spread out of them!.
grill several pieces about 5 pcs!. (red ones are better) if they are already tender in the inside, remove the skin chop them finely add two cups of grated cheese and half a cup of soften butter then mix all together and use it as a bread spread!.
