Question: Question About Biscuit Topped Casserole!?
When I bake a casserole I like to top it with biscuits!. But the bottoms of the biscuits(the part touching the ingredients in the dish) often come out under baked!. How can I prevent this!? Thanks!.Www@FoodAQ@Com

If the top of the biscuit is cooked, the bottom is most likely not under cooked!. It is probably just very moist and may seem raw because it is right on top of the food soaking up the steam as the food cooks!. If you let it sit a minute after it is done cooking it will firm up a little!. I have this same situation when I make chicken and dumplings!. Although I like it!. Www@FoodAQ@Com

Put the biscuits on top of the casserole at the end of the cooking time of the casserole!. or!.!. if the biscuit receipt calls for 10 minutes of cooking time then the biscuits s/b put on top of the casserole during the last 10 minutes of the cooking time of the casserole!.!.Www@FoodAQ@Com

You have to have a hard simmer (at least) before adding the biscuits!. 20 minutes at a good simmer - no lid!. Then turn it down to a low simmer and cover it tightly for 20 minutes and you are done!Www@FoodAQ@Com

This is the usual for mine too!. If I want it all "crispy" I will bake the biscuits or puffed pastry (pot pie) separate and serve the casserole with or on the biscuits!. Www@FoodAQ@Com

i don't really know, but i guess that you can bake them separately and then put them on top!.Www@FoodAQ@Com

try making the biscuit dough a bit thinner!. or try using the Bisquick mix that always works wellWww@FoodAQ@Com
