Almond Chicken
Ingredients:
4 chicken breast halves, skinned and boned
1 large egg
1/2 teaspoon dried tarragon, crumbled
3/4 cup sliced almonds, finely, minced
1/4 cup grated Parmesan cheese
2 Tablespoons olive oil
2 Tablespoons unsalted butter
Salt and freshly ground white pepper
Blanched almond flour for dredging
Lemon wedges
Place chicken breast halves between two sheets of plastic wrap and lightly pound to an even 1/2 inch thickness!. In a shallow bowl, beat the egg and add the tarragon; season with salt and pepper!. On a plate, combine the minced almonds and Parmesan cheese!.
Heat oil and butter in a skillet large enough to hold chicken pieces without them touching each other!. Dust the chicken breasts with almond flour and dip in egg and then in almond/cheese mixture to coat completely!. Immediately transfer them to the skillet and sauté until golden brown, about 1 1/2 minutes per side!. (To make sure that the chicken is cooked right through, cut into a piece!. It should be pearly white, not pink in the middle!.) Transfer to heated plates, season lightly with salt and pepper, garnish with lemon wedges

1/4 cup almond flour
1 cup ground almonds
1 large egg
1 tsp salt
1/2 tsp pepper
1/4 tsp paprika
1/2 tsp garlic powder
1/2 tsp oregano
1/2 tsp rosemary
2 tbsp butter
Directions
Fillet the chicken breasts into whatever size you prefer as long as they are no more than 1/4" - 1/2" thick!.
Combine the soy flour, ground almonds, salt, pepper, paprika, garlic powder, oregano, and rosemary in a bowl!.
Beat the egg!. Coat a cookie sheet with the butter (or use cooking spray to save on fat and calories!.)
Coat each piece of chicken in egg and then the dry mixture and place on cookie sheet!.
Bake at 375 degrees for about 10-15 minutes!. Depends on your oven and cookie sheet!.

Preheat the oven to 350°F!. Rinse off the chicken legs, then pat them dry!. Put the flour, salt, pepper, and poultry seasoning into a plastic bag and then put in two legs at a time and shake them up to a coat!. Break the eggs into a large, flat bowl or soup plate, add a little water, and beat them together!. Dip the floured chicken legs in the egg mixture, and then dredge them in the almonds!. Lay the legs out on a greased baking pan and bake for about 25 minutes, or until golden brown and juicy!. Dot the chicken with the butter pats halfway through cooking to baste them!. Serve immediately or place them in the fridge, covered, overnight and serve cold!.
