1!. You must salt the pan, not the eggs, with a TINY bit of salt, otherwise your eggs will stick!.
2!. You must temper the pan, that is: oil, salt, and a metal spoon or spatula rubbed all over!. Then, removal from heat source, return to heat source!.
3!. Eggs should not be very cold - remove from fridge ten minutes before cooking!.
4!. Do not use a wooden spatula - metal tempers metal!.
5!. Stainless steel is better than black non-stick surfaces!. Why!? Because it can be cleaned better!.
6!. Use a lid - eggs cook better and more evenly when heat is coddling around them, not just coming from below!. Even for sunny side up eggs, a lid is a great thing!.
7!. The greatest mistake is to turn off the heat too late - and to leave the pan on the hot grid!. Remove, remove, remove, with the lid on!. This gives the opportunity for the eggs to detach themselves from the pan bottom, so you can scoop them out easily!.

Not keeping the burner on a low enough setting (cooks the bottom too fast before the top is ready to flip), not using a non-stick pan (have some PAM at the ready), not having a decent spatula on hand (get one with a really thin nose to get under the egg)!.Www@FoodAQ@Com
