Ingredients
* 1/2 lb large elbow macaroni
* 3 tablespoons butter
* 3 tablespoons flour
* 1 tablespoon dry mustard
* 3 cups milk
* 1 egg
* 1/2 cup finely diced onion
* 1 bay leaf
* 1/2 teaspoon paprika
* 12 ounces shredded sharp cheddar cheese (or more if you like it really cheesy)
* 1 teaspoon kosher salt
* fresh black pepper
TOPPING
* 3 tablespoons butter
* 1 cup breadcrumbs
Directions
Preheat oven to 350°F!.
In a large pot, cook pasta to al dente!.
While pasta is cooking, in a separate pot, melt the butter!. Whisk in the flour and mustard, keeping it moving for about five minutes, making sure it is free of lumps!.
Stir in the milk, onion, bay leaf and paprika!. Simmer for about 10 minutes and remove the bay leaf!.
Add the egg, mix thoroughly, and stir in 3/4 of the cheese!.
Season with salt and pepper!.
Fold the macaroni into the mix and pour into a 2 quart casserole dish!. Top with remaining cheese!.
TOPPING:!.
Melt the butter in a small sauce pan and add the bread crumbs to coat!.
Put the bread crumbs on top of casserole!.
Bake for 30 minutes!. Remove and let stand for 5 minutes before serving!.

TUNA MAC CHEESE BAKE
8 oz!. elbow macaroni
16 oz!. ricotta or cottage cheese
1/2 c!. chopped onion
Salt and pepper to taste
1 tbsp!. basil
1 tsp!. garlic powder
1 tsp!. parsley flakes
2 (6 1/2 oz!.) cans well drained and rinsed tuna, chunk style
1/2 c!. Parmesan cheese
1 (8 oz!.) pkg!. peas or mixed vegetables
8 oz!. shredded Jack or mild Cheddar or both (leave some for topping)
Mix all together in large bowl, place in shallow oblong Pyrex baking dish (2 x 9 x 13)!.

1 1/2 cups half-and-half
8 ounces cubed processed cheese food
2 eggs, beaten
1/4 teaspoon salt
1/8 teaspoon ground black pepper
DIRECTIONS
Bring a large pot of lightly salted water to a boil!. Add pasta and cook for 8 to 10 minutes or until al dente; drain well and return to cooking pot!.
In a small saucepan over medium heat, melt 8 tablespoons butter; stir into the macaroni!.
In a large bowl, combine the Muenster cheese, mild and sharp Cheddar cheeses, and Monterey Jack cheese; mix well!.
Preheat oven to 350 degrees F (175 degrees C)!.
Add the half and half, 1 1/2 cups of cheese mixture, cubed processed cheese food, and eggs to macaroni; mix together and season with salt and pepper!. Transfer to a lightly greased deep 2 1/2 quart casserole dish!. Sprinkle with the remaining 1/2 cup of cheese mixture and 1 tablespoon of butter!.

My mother, grandmother and I have always made baked mac & cheese, but I've never heard of putting eggs into it!. That would congeal it; and you'd be cutting wedges of it to serve!. I just layer cooked elbow macaroni with grated cheese & finely chopped veggies (about 3 layers each) and pour a seasoned white sauce over the top; dot with butter and bake it!. My mom put cornflake crumbs on top, but we don't really like that extra crunch!.!.!.!.!.Www@FoodAQ@Com
