SIFTING FLOUR:

There are several reasons to sift flour!.

1) Flour will compact during storage & handling, but it will not compact at the same rate!.

2) sometimes it's lumpy (usually not a problem with modern flour)!.

3) Sometimes it has additional random protein (insects) (again, usually not a problem these days)!.

4) Sometimes you have to sift ingredients into flour!.

Yes, it really is important!. A cup of sifted flour is actually less flour than a cup of unsifted flour!. also, don't pack it in the measuring after you sift it, that defeats the purpose of sifting!.

Sifting makes the batter less likely to have lumps or those little uncooked wads of flour stuck in after you cook!.Www@FoodAQ@Com

Yes, it IS important!.
Let me tell you a story of WHY;
I was making my very first Angel Food cake!. I did everything as told to me in recipe, EXCEPT sifting, I thought it didn't matter, and I thought it would just be fine!.
HELLO, ANGEL FLOP CAKE!
I had made THE VERY FIRST LEATHER CAKE!
Um, I learned a lesson there, and YES, if it says sift, I DO IT!

Well, if you don't sift it, there will be lumps of flour in the cake and it may affect the rising of the cake!.
If you don't have a sieve, just run your fingers through lightly and try to get rid of any lumps!.
