You have to keep them really cold so that the crust comes out flaky!. Otherwise, the fat content (butter or shortening) will melt into the flour and make it hard!.Www@FoodAQ@Com

its a way of hardening the crust ahead of time!. the butter in the crust makes it crumble easily if you dont harden it!.Www@FoodAQ@Com

It cools down the butter so the crust doesn't mix with the filling and also so the crust holds it's shape better!.Www@FoodAQ@Com

It keeps the fats cold and that makes for a flakier pie crust!. Www@FoodAQ@Com
