I have been making potted shrimp, but when i cook them they smell of ammonia, why is this?!

It's iodine you smell!. All bi-valves contain iodine!. The iodine content actually increases in them after they are dead, whether frozen or not!. Your shrimp may have been frozen for a long time!.
Cooking them in a different way, like frying or sauteing them might decrease the aroma of iodine, but not the content!.
They are still OK to eat, as long as you or anyone else eating them is not allergic to iodine!. Most people don't know that an allergic reaction to shellfish is usually to the iodine in them!.Www@FoodAQ@Com

I watch a ton of food network, and they say if you smell ammonia in fish to discard it, it is a bad thing!. I once had to discard an entire pound of lobster meat and two pounds of haddock on another occasion!. It is a very expensive problem!. I would not buy previously frozen fish, try if you can to buy as fresh as possible and cook it the same day as not to waste it!.Www@FoodAQ@Com
