Question: What's Wrong With My Angel Food Cake!?
It doesn't come out light and delicate like a store bought one!. It is dense and chewy!. What am I doing wrong!? Not enough cream of tartar!? Too much/not enough beating!? What!? Please help!. Thanks!.

Sounds like you are mixing the beaten egg whites and the dry ingredients too much, thus deflating the egg whites!. You need to gently fold the dry ingredients in!. A few streaks of flour is OK!. also do not grease the pan so that the cake can cling to the sides as it rises!.Www@FoodAQ@Com
