Does anyone have a gammon joint recipe?!


Question: Does anyone have a gammon joint recipe!?
I'm making a sunday dinner tomorrow but have decided to have a gammon joint instead of chicken!.
Does anyone have any gammon joint recipes as i have never made it before!?!?

Ingredients (serves 4)
2 - 3 kg Gammon Joint
20 or so Cloves
Glaze Ingredients
1 tbsps runny honey (warm slightly in not runny)
1 tbls brown sugar
1 tsp mustard powder
1 tsp worcestershire sauce
1 tsp tomato puree
1 tsp vinegar (balsamic if you have it)

Method
Soak the joint, ideally overnight, in cold water!. This helps to remove any excess salt from the curing process!.
Mix together the glaze ingredients!.
Drain and rinse in cold water!. Place in a pan and cover with fresh water, bring to the boil and simmer covered for 1 hour!.
Drain and remove from the pan!. Cut off the skin and discard leaving a nice covering of fat on the meat!. Stud the fat with the cloves then cover the meat with the glaze!. You may wish to allow the meat to cool slightly first!. If not be careful as the joint will be very hot!
Place in a pre-heated oven at 200°C (180° C if it is a fan oven)
Roast for another 45 - 60 mins until cooked through!. If the top stats to burn turn the oven down a bit!.

Baked gammon joint with mustard mash and garlic greens
1 Gammon joint
500 g potatoes
50 g (2oz) butter
1 egg
tsp english mustard
pinch sea salt
pinch black pepper
500 g green vegtables
1 clove garlic
Heat the oven to Gas 5, 190°C, 375°F!.
Rinse the gammon in cold water, place on a small, lightly oiled baking tray, cover with tin foil and bake in the oven for 1 hour and 15 minutes!.
Peel the potatoes and simmer in a pan of boiling water for 20 minutes, drain well, return to the pan and shake over a low heat to evaporate excess moisture!. Mash, adding most of the butter, egg, mustard and seasoning!. Mash again!.
Trim and slice the beans and simmer in boiling water for 2 minutes, add the peas and cook for 1 further minute!. Drain, add remaining butter and crushed garlic!.
Remove the ham from the oven and slice!. Divide among four plates, add vegetables and serve!.

Ingredients
2kg Unsmoked English Gammon Joint
1 litre carton Apple Juice
1 cinnamon stick
? x 215ml bottle Balsamic Glaze
6 small English eating apples, such as Cox's, cored and halved


Method
Place the gammon joint in a large lidded pan!. Pour over the apple juice and add the cinnamon stick!. Bring slowly to the boil, reduce the heat, cover and simmer gently for 70 minutes, turning once!.
Preheat the oven to 180°C, gas mark 4!. Drain the gammon, reserving the cooking liquor, then place the meat on a chopping board!. Remove the string and cut away the skin with a small, sharp knife!. Lightly score the fat in a diamond pattern!. Place the balsamic glaze in a bowl and stir in 3 tablespoons of the reserved liquor!.
Place the gammon in a roasting tin with the apple halves around the meat!. Spoon the glaze over the gammon and apples, and cook for 45-50 minutes, brushing the joint occasionally with the glaze and turning the apples once!.
Remove the gammon from the oven and allow to stand for 10 minutes!. Place the apples on a serving plate, cover with foil and keep warm until ready to serve!.
Stir 150ml of the reserved liquor into the juices in the tin!. Pour into a small saucepan and cook on the hob for 2-3 minutes until bubbling!. Serve the gammon with the roast apples, new potatoes, tenderstem broccoli and garden peas, drizzled with a little of the sauce!.

what i do is cook mine like my mother in law did!.put it in a baking tin pour half a bottle of ginger beer on it and cover with tin foil cook on a no!.4 for 20 minutes a pound!.the ginger will take out the saltiness and make it very tender!.or just wrap it in foil and cook on a number 4 for 20 minutes a pound until tender!.Www@FoodAQ@Com
